Filosofía de mínima intervención, microclima frío, acidez natural, no se usan bombas en fermentación, se hace bazuqueo para obtener un tanino elegante. Trasiegos por gravedad, guarda en depósito de hormigón subterráneo durante mínimo dos años para clarificar de manera natural. Los vinos resultantes son frescos, elegantes y muy gastronómicos. Minimal intervention philosophy, cool climate, natural acidity, fermentation without pumps, we do punching down instead to get fine and elegant tannins. Wines are gravity racked and kept in underground concrete vats for a natural fining during at least 2 years. The resulting wines are fresh, elegant and great for gastronomy.

With your personality, charisma, and natural ability to connect with people, I’m sure you’ll make a real difference in the lives of many on the Camino.
And the parallel we drew with the Road to Emmaus really moved me.

We have a special connection with Korean pilgrims. This morning Min Woo knocked our door and he picked a bottle of Ars Nova.
