This harvest gave us the chance to focus on the small things that make the biggest difference in quality. We added shade over drying beds for slower, more even drying, provided hands-on training for station staff, and closely monitored drying bed activity each day. Quality is built by adjusting the small things and through detailed monitoring at every stage. Simple actions, stronger results.

In the midst of moving our coffees from Bensa to our Addis Ababa warehouse, there’s a lot of cupping happening in the office. We cup every arrival to differentiate grades and cup profiles for each lot. Although all coffees are first cupped at our Bensa office, we cup again in Addis to match profiles, maintain traceability, and ensure consistency. We also cup with visiting clients to better understand their needs and select the right coffees.

Sidama New Year, celebrated for generations after the harvest season. It is a time when communities come together to reflect on the past season, and welcome a new beginning.

For us this moment closely reflects the rhythm of our work. As the harvest ends, we also begin again, preparing for the next harvest, caring for the farms and looking ahead to a new coffee season.

Another new project we undertook this recent harvest. Across our 13 farms in Sidama, close to 50 hectares, we’re taking a focused approach to precision and traceability. Each farm is managed and harvested individually to preserve its unique character.

All cherries are brought to Gatta to be processed separately, with dedicated drying beds and unique lot codes for each farm. This ensures full traceability from farm to cup. Every lot is also cupped individually, allowing us to understand and refine the distinct profiles from each farm.

Harvest is complete. After months of careful picking, processing, and preparation at origin, we are now entering shipment time. Our coffees are moving from our Bensa warehouse to Addis Ababa, where final milling, quality control, and sample confirmations take place. Once everything meets our standards, the lots are prepared for export and shipped to our partners around the world.

We launched our single-farmer project for the first time, processing each farmer’s coffee individually at Gatta. 30 dedicated member farmers now deliver their cherries to the station, where each lot is handled on separate processing blocks, carefully tracked from cherry to cup. This approach strengthens traceability, transparency, and quality control, allowing each farmer’s work and character to be clearly expressed.

By giving every lot its own space and attention, we highlight distinct cup profiles and true farm-level identity, creating a stronger connection between the farmer, the process, and the final cup.

Today, our coffee processing students graduated after three months of training at Gatta. This marks our sixth year welcoming fresh graduates from different regions, and this year we had our largest group yet with 29 students. Each year, we continue to learn and improve the program to give students a better training experience.
