This morning at 4:43 a.m., I woke up suddenly, anxious about the dropping temperatures in the vineyards of Montgueux. We reached a low of -2.5°C—enough to mean a partial loss of the crop. By 7 a.m., the team was already in the vines, applying a valerian preparation (5 ml/ha) in the hope of helping the plants recover. A reminder of how fragile and precious each harvest truly is.
Later that day, I experienced something completely different—yet equally profound.
Lunch at Mirazur, guided by the extraordinary vision of Mauro Colagreco, became the most floral and poetic meal I have ever encountered. Each plate felt like a living artwork—so delicate that you hesitate, just for a moment, before breaking its harmony. Every flower, every piece of fish or meat forms a composition, a movement, a precise graphic where colors and elements are placed millimeter by millimeter.
Textures and flavors are never overwhelming; they are perfectly measured—just enough to surprise, to intrigue, to move you. Every detail expresses creation, technique, and emotion.
After three days of strong winds that cleared both sky and sea, we were gifted with an endless double blue horizon. And standing quietly beside us, a magnificent avocado tree—over 200 years old—seemed to witness it all.
To accompany this journey, we paired the dishes with our cuvées TER BLANC and VINTAGE 2018 from Le Mesnil. The precision of each pairing was simply delightful.
My deepest thanks to Mauro Colagreco and his entire team, both in the kitchen and in service, for creating such a moment. Sharing it with my dear friend Sarah from Santa Fe and her Monégasque friend made it even more special.
