Remontage of the Merlot harvested two days ago
“Pumping over” (called remontage in French) is a technology used in the winery to increase extraction. The winemaker performs it by emptying fermenting must from the bottom of a tank and then pumping it to the top of the tank. A tube is attached to a must pump and the must is sprayed over the top of the must in the same tank. By doing the pumping over (remontage) the winemaker increases the extraction of tannins and colours from the skins.

Château Mělník.Harvest of Müller Thurgau. It was created by crossing the varieties Riesling Rýnský and Madlenka královská (according to gene analysis.) It was bred in 1882 by prof. H. Müller, who came from the Swiss canton of Thurgau. The Müller Thurgau variety was registered in the Czech Republic in 1941. The grape is medium-sized and medium-dense with a short stalk. The berry is small to medium-sized, broadly elliptical. The color of the berry is yellow-green. Müller Thurgau wine has harmonious lower acids, is medium-bodied with nice aromas of flowers and nutmeg.
