Hugo Chaise swapped the kitchens of Noma and the George V for Hugo chaise, an unfussy canteen inspired by thoughtful cooking.

Paired with Château Rieussec, his Grilled Kim’Cheese became something entirely new. The wine’s sweetness softened the kimchi’s spice, its freshness cut through the richness of the cheeses. Another unexpected yet delightful pairing.

The first buds are stirring in the vineyard as nature gently wakes. Pruning helps guide the vine’s balance, but it doesn’t decide when budburst begins. That cue comes from light, warmth and the rhythm of the seasons. For now, we simply watch as life returns to the rows.
