The first buds are stirring in the vineyard as nature gently wakes. Pruning helps guide the vine’s balance, but it doesn’t decide when budburst begins. That cue comes from light, warmth and the rhythm of the seasons. For now, we simply watch as life returns to the rows.

Something about Château Rieussec 2011 seemed to spark .repeto’s imagination. He spoke of its delicate woodiness, its lasting freshness, then brought it all to life on the plate.
First came a mushroom tartlet with horseradish mousse. Then duck magret Rossini, lifted by a citrus twist that tied foie gras and duck together effortlessly.

The richness of our wines is never the result of a single element. At the meeting point of Fargues and Sauternes, the vineyard rests mainly on sandy gravel soils, with pockets of clay limestone, a combination prized for its balance between drainage and water retention.

Duck magret Rossini, but not quite as you know it. .repeto’s version came with a bright citrus twist that pulled the foie gras and duck into perfect harmony. On the side? A glass of Château Rieussec 2011.

At , a Parisian institution since 1680, .repeto brings classic French cuisine to life with quiet confidence and just the right amount of flair.
Animated and full of warmth, he started us off with a delicate mushroom tartlet topped with horseradish mousse. Paired with Château Rieussec 2011, it was the kind of opener that made us slow down and pay attention.
