Summer is here, and that means salads, sorbet, ice cream, fro-yo and delicious sundowners 🥗🍧🍨🍦🍹
Made this delicious pistachio ice cream following 's recipe, but with a twist. Super yummy, perfectly nutty and exactly what the doctor ordered for this lovely warm weather ☺️

Back in January, I went to Downtown Toronto for the first time, and ordered the famous frozen bellini and the blackened creole chicken. I had just landed from London and was so tired and hungry, but this meal really lifted up my spirits (and tastebuds)! As someone who lives so far from Toronto, I knew that my next visit would be a long time away, so I decided to recreate this beauty at home! I followed .sassy.foodie's copycat recipe on her website and let me tell you something, the fact that you make your own Cajun seasoning from scratch rather than using store bought definitely elevated this dish! It was extremely close to the real thing and I'll be making this over and over and over again!

Ingredients
- 6 boneless chicken thighs or 3 full skin-on breasts
- 2 tablespoon Worcestershire sauce
- 1 Lemon - juiced

Blackening Spice Rub
- 1 ½ teaspoon Granulated garlic
- 1 ½ teaspoon Granulated onion
- 1 ½ teaspoon Smoked paprika
- 1 ½ teaspoon Dried thyme
- 1 ½ teaspoon Brown sugar
- 1 teaspoon Cayenne pepper
- 1 teaspoon salt
- ½ cup Salted butter - softened

Sometimes I plan my meals in advance, other times I just grab whatever is lying around and make it work 🤝 We're a little obsessed with Italian cuisine, and risotto is one of my favourite things to make. This was super easy to make and it tasted so amazing!



INGREDIENTS:
Half packet of arborio rice (about 350-375g)
1 packet squid (about 400g)
Fresh parsley, chopped
1 red chilli, sliced
2 cloves of garlic, minced
1 Shallot, diced
1 Onion, diced
Olive oil (extra virgin is best)
1 litre beef stock
1 teaspoon fish sauce (optional, for extra flavour)
Some white wine (optional, to deglaze)
Fresh lemon juice and the zest of 1 lemon
Some salt and pepper to taste
Parmigiano Reggiano

METHOD:
• Clean & slice calamari, sq**rt lots of lemon juice on it
• Sautée finely chopped 1 shallot, 1 onion, two garlic cloves, 1 red chilli pepper
• Add calamari and fry, then add parsley and cook
• Deglaze with white wine and cook until reduced, roughly 10 minutes on medium heat
• Add arborio risotto rice once wine has evaporated, and cook on medium-low heat
• Once rice starts getting translucent, prepare about 1 litre of stock (veg is best but beef can work), add a teaspoon of fish sauce (optional) and pour over the rice, little by little.
• Allow it to cook down before adding more stock
• Once rice is cooked to al dente and all stock is used up, add more chopped parsley, and season with salt and freshly ground black pepper
• Sq**rt some lemon juice and add lemon zest to the pan and stir for a minute or two
• Serve with a bit more lemon zest, an extra sq**rt of lemon juice, and grated Parmesan
• Buon appetito 🤌🏽

Dinner last night was so sensational 🤤

Super juicy and yummy pork ribs seasoned in Nyama Spice, smoked paprika, sage and mixed herbs, roasted in the oven on low heat for 2 hours then glazed in bull’s eye bbq sauce at the end. Served with homemade air-fried sweet potato fries coated in smoked paprika, cinnamon and all purpose seasoning, a homemade kale and edamame bean salad, and some cream cheese to dip my fries in 🤤🤤🤤

It’s been forever, I know 😅

After a long hiatus from the kitchen (I did cook some days, but only because I had to 🥴), I took a trip to Mwanaka to buy some boerewors and other meats because I’ve been having hella CRAVINGS for some serious meat 😭

The other night, I made these delicious countrystyle boerie dogs for dinner in an airfryer, and I can still taste the yumminess days later 🤤🤤🤤
Cooking them in an airfryer made the casing nice and crusty, and the inside was super juicy as the sausage didn’t burst. The flavours were even more pronounced and I nearly bit my tongue that night. 10/10 sausage *chefs kiss*

Homemade chocolate mousse in home baked meringues, garnished with strawberries and what was supposed to be mint but is actually strawberry leaves for aesthetics 😉 and droplets of raspberry coulis.

So I wanted to make chocolate mousse, set it in little glasses and just garnish it with strawberries. However, while I whisked the egg whites for the mousse, an idea occurred to me to make meringue nests. I’ve never made meringue in my entire life, so I went on my trusted google and looked up a simple meringue recipe. I couldn’t believe how straightforward it seemed, all I needed was two egg whites and caster sugar?! So I went ahead and made some. I didn’t do the classic piping method. I just haphazardly plonked a few blobs onto parchment paper and made a well in the centre using a spoon. Then once they were done and cooled down, I put the mousse in. Now, this dessert didn’t come out perfect because I didn’t give myself enough time. The meringue cups were still quite warm in the centre when I put the mousse in, and my mousse hadn’t had enough time to set when I served dessert. I should have made this the night before, but oh well! It still tasted delicious and the meringues were super crunchy which was good enough considering. I’m hoping to make some more for NYE, hopefully refined. I’ll even use a piping kit this time 😅
