We've had some new arrivals at Lyons Hill Farm this week.
Cornish Celtic chicks.

At the moment they're tiny, yellow, slightly chaotic and a very long way from a kitchen.

Over the next 180 days, that will slowly change. They'll spend their lives outdoors, roaming wildflower meadows and cider apple orchards, growing properly the way chickens used to.

We'll be sharing the journey as they grow, so follow along if you'd like to see how they get on.

..most commercially produced beef is devoid of any meaningful flavour.

British beef used to mean something on the world stage, but no longer. Farmers are in too much of a hurry these days. Cattle used to be given long enough to develop proper fat, and meat with depth of flavour and real character. Not anymore.

Aurox Beef is different. Dark meat, creamy to yellow fat. The flavour is built in, not added.

It's Great British Beef Week this week.

Most British beef comes from cattle that are unlikely to be much beyond two years old. Commercial cattle are bred to grow fast. More profitable, but definitely not more flavourful.

Aurox Beef comes from cows that have lived two to five times as long as anything you'll find in a supermarket. The result is dark meat, creamy to yellow fat, and a depth of flavour most people haven't tasted since their grandparents cooked it.

Less than 1% of UK beef meets our standard.

Cattle that graze across multiple seasons accumulate carotenoids from grass, turning their fat creamy to yellow. It is the colour of an animal that has actually lived.

Most commercial beef is white-fatted because the animals are too young to have grazed long enough. Aurox beef is, well, different.

If that's not the perfect excuse for a barbecue, I don't know what is.

Aurox Beef doesn't need a marinade. It has spent six to twelve years developing the kind of flavour that no bottle of sauce can touch. It needs heat, salt, and someone who knows to rest it.

Côte de boeuf, ribeye, picaña, sirloin, bavette. All cuts worth firing up the barbecue for.

What you are looking at is not "normal" pork.

Iron Age pork comes from a rare cross between a Eurasian Wild Boar and a Tamworth, raised in our Dorset woodland for over ten months. Commercial pork is ready in five. That difference in time shows up directly in the meat: darker in colour, denser in texture, with intramuscular fat that develops slowly and carries incredible depth of flavour.

It is why .tto use it. And why, once you have cooked it at home, "normal" pork becomes difficult to go back to.

If anyone can think of a better example of British pork than what we produce in our woods at home, I'd love to know where to buy it.

Iron Age pork doesn't just look different from the pale pork you might be used to, it tastes very different too. It is a cross between a Tamworth and a Eurasian Wild Boar, and our pigs live a life that's over twice as long as commercial pigs.

Some could call it Britain's answer to Spain's Iberico pork due to its wild genes, dark meat, and outrageously tasty fat.

Chefs up and down the country are mad for it because there is no other pork in Britain that tastes like it.
