This week, alongside preparing for Holmfirth Food and Drink Festival, we've been throwing together a couple of crazy co-ferments.
Firstly, a co-ferm that we've done for a few years now, Hip Hop Disco. I harvested 1kg of hop flowers from my neighbour's and my garden and stirred that into 100 litres of Discovery juice. The result is usually a crisp, dry, hoppy, refreshing sparkling c***r. We put all of this into keykegs.
We've also teamed up with Helme Edge Vineyard, from where I have scavenged the red skin pomace of pressed Cabernet Cortis grapes. I've married that with the freshly pressed juice of the Katy apple. I'm hoping to get some colour out of the grapes and a tannin depth.
Both are full juice, both naturally fermented with wild yeasts.
