These Peanut Cookies are a healthier alternative to the sweet treats usually found in grocery stores. Very low in sugar and packed with protein and good fats, these are great to have on standby to satisfy a cookie craving!

Recipe

SHOPPING LIST
- 2 eggs
- 1 tsp vanilla extract
- 1/4 cup coconut flour
- 1/2 cup Sukrin Gold
- 1/4 cup coconut oil
- 1 cup peanut butter
- Pinch salt

METHOD
1. Pre-heat oven to 180c
2. Line a baking tray with baking paper
3. Place all of the ingredients into a large bowl and mix together until it’s well combined and forms a dough
4. Make 20 balls out of the dough
5. Place the dough balls onto the tray, evenly spaced apart
6. Press each dough ball with fingers to flatten and indent with a fork for a criss-cross pattern
7. Place the dough balls into the oven and bake for 15 minutes at 180c

Don't try to be perfect - we often hear our members feeling badly for 'slipping up' on their nutrition. Instead of feeling badly about having food that may not be completely healthy, plan for it and really enjoy the experience. If you can follow a healthy eating regime for 80% of the time you can and will achieve amazing results. So next time you feel guilty about the occasional indulgence, remind yourself that you're working hard to get somewhere, and the occasional reward is essential! Have a great weekend people!
