Your weeknight dinner sorted and it's all happening in one pot. 🙌

May is here but we're not ready to give up comfort food just yet. Kofu sausages, sundried tomatoes, and a creamy, rich sauce that tastes like you've been cooking for hours. Spoiler: you haven't.

Ingredients:
🍝 2 tbsp olive oil
🍝 4 Bonsan Kofu Sausages, sliced
🍝 1 onion, diced
🍝 300g pasta of your choice
🍝 200g cherry tomatoes, halved
🍝 6-8 sun-dried tomatoes, roughly chopped
🍝 2 tbsp tomato purée
🍝 1 litre vegetable stock
🍝 Salt and pepper, to taste
🍝 100ml vegan cream
🍝 40g fresh baby spinach, chopped

1) Heat the oil in a large, shallow casserole dish and fry the sliced sausages and onion for 6 minutes until browned all over.
2) Add the cherry tomatoes, sundried tomatoes, pasta, tomato purée and stock. 3) Season, bring to the boil, then reduce to a simmer. Cover and cook for 12-14 minutes, stirring every few minutes, until the pasta is cooked through.
4) Stir in the spinach and vegan cream.
5) Cook for a further minute until the spinach has wilted.
6) Taste and adjust seasoning.
7) Serve with a sprinkle of fresh basil and enjoy. You've earned it. 🌱
