Banana, Apple & peach, poached and caramelised before adding a drop of Rhum... Topped with vanilla ice cream, something I haven't done since catering school nearly 35 years ago, still delicious.

Best pairing yesterday, the Barbera d'Asti Desideria Guasti Clemente 2021 was really interesting, as I opened it last Sunday, it was then dull and hard, but after breathing 6 full days, it becomes alive and showing its elegance, definitely a keeper, or to be decanted and let it breath for 2/3 hours

Baracarato Nizza 2016. Just arrived in the UK, a great exclusivity for my portfolio. The grapes are sourced from one of the oldest vineyards of Barbera in the town of Nizza Monferrato. Complex and intense notes of fresh violets along hint of the finest red flowers, ample notes of ripe blackberries, blueberries followed by species notes of black pepper, vanilla along with a sublime touch of chocolate, finished in a delicate hint of oak.
