Here's Red Cat's summer kitchen checklist:

Temperature logs up to date (actually up to date, not filled in on Friday)
All seasonal staff trained on allergen procedures
Fridge and freezer temps checked morning AND evening
Cleaning schedules covering the extra footfall
HACCP plan reviewed since you last updated the menu

How many can you tick off right now?

If the answer is "most of them”: good. If it's "some of them”: let's talk.

The moment you have even one employee, health and safety law applies to you. Full stop.

Legionella. It sounds alarming. And in the wrong circumstances, it can be.

But here's the thing: with the right controls in place, it's very manageable. 💧

Legionella bacteria can grow in water systems (cooling towers, hot and cold water systems, spa pools) and when inhaled, can cause Legionnaires' disease.

If you manage a building, you have a legal duty to assess and control the risk.

Redcat spotted this...

In this café, chemicals and drinks were stored together, something that shouldn’t happen.

The staff were seen moving the items but not putting them away.

This can result in chemical contamination of drinks for customers, and potential staff injuries.

Even temporary storage can create risks for customers and staff. Always make sure everything goes back where it belongs...
