The Wave Washed lot is clean, floral and transparent, while the XT takes the same approach further, building more sweetness, texture and aromatic complexity.

Together, the set shows how processing can shift the profile of the same coffee. Expect florals, layered sweetness, vibrant acidity and a clear contrast between elegance and intensity.

Pepe’s Wave Washed XT process takes the Wave approach further, using extended fermentation control to build greater sweetness, texture and aromatic complexity while preserving clarity and structure.

Through controlled oxidation, temperature shifting during fermentation and extended resting time, the Sidra develops a deeper and more expressive profile.

This gives the Sidra a more intense expression: layered florals, syrupy texture, vibrant acidity and a longer, more structured finish.

Pepe’s Wave Washed process is built around controlled temperature shifts during fermentation, designed to enhance clarity, texture and varietal expression rather than heavy fermentation character.

The cherries are carefully sorted, fermented in whole cherry, depulped, then moved through further controlled fermentation stages before washing and slow drying.

The result is a washed coffee with floral aromatics, layered sweetness and vibrant acidity, finishing clean, elegant and transparent.

Marcos Herrera’s Geisha from Lonya Grande, Amazonas, Peru. A high elevation nano-lot built on slow cherry maturation and careful picking. Mamaruntu was also recognised in the 2024 Peru Cup of Excellence, placing 14th with a Natural Geisha.

Expect florals, creamy texture, and blueberry sweetness. Structured and clean, with clarity over heavy fermentation.
