Meet Will 👋

If you've visited the Wine Bar recently, there's a good chance you've already met Will.

Before joining Stanlake Park, Will worked as Assistant General Manager for a group of upscale Italian restaurants, creating monthly wine lists, pairing wines with food and overseeing day to day operations. Before that, he spent time working around wineries in Australia's Hunter Valley, developing a passion for great wine and hospitality.

So what drew him to Stanlake Park?

"The connection to nature, the passion for making good wine and sharing it with people."

In fact, one of the things that surprised him most about moving to the UK was discovering that a place like Stanlake Park even existed.

"It gave me the chance to continue my love of hospitality and well made wine after moving from Australia."

When it comes to favourite wines, it depends on the vintage and the season, but right now he's reaching for Madeleine, Fiano and Pinot Noir Rosé.

Outside of work, Will is happiest on or under the water. Growing up on Australia's Lake Macquarie sparked a lifelong love of sailing, diving and the ocean. He's a qualified Dive Master with more than 1,500 dives under his belt, has dived all over the world and has encountered more than 19 species of shark, including cage free dives with Great Whites and Tiger Sharks.

And his hidden talent?

Cooking. Growing up with parents who ran restaurants meant he spent much of his life around kitchens, from fine dining restaurants to gastropubs, and he's still happiest when creating something delicious to share with friends and family.

Next time you're in the Wine Bar, ask him which wine he'd pair with your lunch. Just don't get him started on sharks unless you've got a spare half hour...

A little heads up for the Pinot Low fans...

There are now fewer than 30 bottles left in the Wine Bar, and once they're gone, they're gone... for a while at least!

Pinot Low captures everything people love about our Pinot Noir Rosé. Delicate red cherry, bright citrus notes and a refreshing finish, but at just 5% ABV.

Unfortunately, the hot conditions in 2025 meant the grapes ripened too quickly, so we weren't able to make a new vintage. Pinot Low relies on very early harvested Pinot Noir grapes with naturally low sugar levels, and last year's growing season simply didn't give us that opportunity.

So if you've been meaning to pick up a bottle, now might be the time.

Joining our beautiful wines grown, made and bottled just meters from your table, and selection of local craft beer cans is draught Double-Barrelled Brewery beer. There's something to suit all tastes!

The World Cup has officially kicked off, and as our numbers consist of great people from all over the globes, excitement is high at Stanlake Park.

🍕 Fornoza Pizza and Italian Wines 🍷

A quick reminder that this Friday, June 12th, our Wine Bar will be closed for a private event. But don't worry, we're opening up our Coach House instead, with the brilliant Fornoza Pizza serving fresh, hand stretched sourdough pizzas from 5pm to 9pm.

Whether you're planning to join us for the evening, pop in for a glass of wine while you wait, or simply grab a takeaway on your way home, pre ordering is the best way to make sure you get exactly what you want.

Drinks wise, we'll be serving a limited selection, so have decided to go full Italy, with our Italian Collection: Fiano, Primitivo Rosé and Negroamaro. A beautiful white, rosé and red made from grapes in our family vineyard in Puglia. We will also have a sparkling, fresh from Southern Italy and exclusive to Stanlake Park in the UK.

Ironico is a unique frizzante made by our friends in Puglia. It's not available anywhere else in the UK but right here. Prosecco style with the ripe fruit flavours of puglia - zesty lemon, peach and hints of white flowers. Refreshing, delicate and the best pairing for pizza 🍕

We'll also have draught craft beer from Double Barrelled Brewery and a selection of soft drinks available.
