Using a blue to mark the edge shows me where the stone is in contact for the full length of the edge.

After many runs across the waterstone, both sides equally, I have cut away the chipped edge and formed a new one. The remaining blue will be cleaned off before leather honing.

Neglect is the biggest problem of keeping your knife (s) sharp. Acid attack from vinegar in pickled items perhaps? Wash immediately, dry and oil with a tiny smear of olive oil.
Keep the edge away from ceramics (plates!), metal (other cutlery or steel carving dish, draining board) and hard work surfaces. Don't even put them down on one!
Wooden work boards, or plastic, only. Definitely do not put them in a dishwasher, ever!
Look at the holes eaten into this steel blade.

A full set of kitchen / chef knives to sharpen today.
Edge angle set by using a telltale marker and a scratch test.
Long or flexible blades are held in a wide jig for stability.
The water stone keeps the work cool during the process.
Each knife is tested on vegetable skin.

Woodworking blades. A new customer brought me a selection of plane blades to sharpen.

The beauty of the Tormek system is the fine stone, is immersed in water and revolves slowly, keeping the work cool and removing minimal metal.

The precision jigs maintain the angle set creating a superior finish.

The marker ink allows the angle to bet set correctly by indicating very accurately where the stone is contacting the edge, before sharpening is commenced.
