What’s in a name?
Heritage, craft and nature captured together.

Our first wine we’ve called ‘Wilde Birle’.

A low-intervention wine,
made with the wild yeast naturally found on our grapes.

𝐖𝐢𝐥𝐝𝐞 – (noun) – '𝘪𝘯 𝘢 𝘯𝘢𝘵𝘶𝘳𝘢𝘭 𝘰𝘳 𝘭𝘰𝘸 𝘪𝘯𝘵𝘦𝘳𝘷𝘦𝘯𝘵𝘪𝘰𝘯 𝘴𝘵𝘢𝘵𝘦; 𝘰𝘧 𝘧𝘦𝘳𝘮𝘦𝘯𝘵𝘢𝘵𝘪𝘰𝘯, 𝘰𝘤𝘤𝘶𝘳𝘳𝘪𝘯𝘨 𝘸𝘪𝘵𝘩 𝘸𝘪𝘭𝘥 𝘺𝘦𝘢𝘴𝘵.’

Researching the etymology of ‘Birling’,
Uncovered an oId English word.

𝐁𝐢𝐫𝐥𝐞 – (verb) – ‘𝘵𝘰 𝘴𝘦𝘳𝘷𝘦 𝘸𝘪𝘯𝘦; 𝘵𝘰 𝘥𝘳𝘪𝘯𝘬 𝘮𝘦𝘳𝘳𝘪𝘭𝘺 𝘪𝘯 𝘨𝘰𝘰𝘥 𝘤𝘰𝘮𝘱𝘢𝘯𝘺’

It was meant to be.

20 years in the making
and finally, something to pour.

seems the perfect time to make a little noise.

After a long-held dream to grow grapes on our Kent Downs chalky slopes,
Last autumn we picked our first harvest.
Some of the fruit has gone to make classic English sparkling wine.

But that's still aging and we won’t release it for another couple of years.

In the meantime, we have a glorious pink pet-nat to enjoy,
thanks to our winemaking partners at Westwell Wines.
It’s a summer picnic & BBQ natural, best enjoyed outside.

For my own part, I’m delighted to be holding the first bottles in my hands.

It’s a short run - only 500 bottles, and
much as we’d like to, we can’t drink it all.

Sales will open shortly.
If you fancy joining the party,
Drop us a line and we’ll set some aside for you.

More on the brand, name and story to follow.

🌿 It's National Hedgerow Week — and we think hedgerows deserve a moment.

They're not just boundaries. They're dormouse highways, bat corridors, nesting sites for yellowhammer and lesser whitethroat, and larders full of hawthorn blossom and dog rose. The UK has lost an estimated 118,000 miles of hedgerow since 1950 - and yet every metre that remains is quietly working overtime for wildlife.

Here on the North Kent Downs, protecting and connecting this landscape - from ancient woodland to chalk grassland to coast - is what we're working towards together. At Birling Estate, we've been working with volunteers to restore 1.5km of hedgerows. There's still plenty to do.

This week, stop by a hedgerow. Listen to it. It has a lot going on. 🌱

Before most of us had even opened our eyes this morning, the Hartley MorrisMen were already at the Coldrum Stones - dancing at dawn to sing up the sun, just as they do every 1st May at this ancient 4,000-year-old site on our doorstep.

There's something quietly wonderful about that. The oldest Morris side in West Kent, at one of the oldest monuments in the country, keeping a tradition alive as the sun comes up over the North Downs.

Happy May Day 🌿🕺

We said goodbye to the sheep on the farm this week. They've been here since the new year, munching on the winter cover crops.

345 acres.
960 sheep.
72 days.

Radish, sending taproots deep to break through compaction; Vetch, fixing nitrogen from the air into the soil; Phacelia, feeding the pollinators while building organic matter.

The sheep graze off the top and return it as nutrients ready for spring crops.

Its been lovely having them here. Lots of comments from people walking through. All enjoying more animals back on the ground.

Good for the soil; good for the soul.

🌱 Hedgerow planting at Birling Estate – volunteers welcome! 🌱

We’ll be planting new hedgerows on Birling Estate on the 17th, 24th & 31st of March and wondered if anyone would like to lend a hand mid-week?

Birling Estate is lucky enough to be home to a hazel dormouse population – a rare and protected species. Hedgerows are important habitat for them and also act as wildlife corridors so populations don’t become isolated.

We’ll be using the slot planting method, so it’s very straightforward and not too strenuous: all you need is a spade to push a slit into the ground, pop the bare-root plant in, then add a cane and rabbit guard.

If you’re up for helping, just reply here or drop us a message 😊
