Today, we are the largest organization of the island representing all the growers and counting 1.200 active members. Committed to safeguard the local cultivations, we produce high quality Protected Designation of Origin (PDO) Santorini wines and produc

ts, as well as promoting sustainable agriculture development. SantoWines R&D examines closely and develops our cultivation and vinification techniques, as we aim to preserve biodiversity, through the operation of a nursery of autochthonous volcanic varieties. Being the ambassadors of Santorini's pure taste we produce: PDO Santorini wines, PDO Santorini Tomato, PDO Santorini Fava, Capers, Caper Leaves, as well as traditional preserves: Grape and Tomato. All the products available by Santo, guarantee the authenticity and the premium quality of the excellent products of the island, that have a distinct position in the worldwide gastronomy. Υπάρχουν στυλ κρασιών που έχουν ταυτιστεί με τη Σαντορίνη. Υπάρχουν όμως και εκείνα που αποκαλύπτουν μια διαφορετική πλευρά της.

Το Santo Sparkling Rosé Demi-Sec, από Ασύρτικο και Μανδηλαριά, ήταν το πρώτο αφρώδες ροζέ που δημιουργήθηκε από παραγωγό της Σαντορίνης, συνδυάζοντας τη φρεσκάδα της εμβληματικής λευκής ποικιλίας του νησιού με τον φρουτώδη χαρακτήρα μιας από τις πιο παραδοσιακές ερυθρές ποικιλίες του.

Λεπτές φυσαλίδες, αρώματα κερασιού και κόκκινων φρούτων, δροσερή οξύτητα και μια ευχάριστη επίγευση συνθέτουν ένα κρασί φτιαγμένο για καλοκαιρινές στιγμές δίπλα στη θάλασσα.

Some nights stay with us because they are remarkable. ⚜️

One of those was the evening dedicated to celebrating the publication of 100 Years of the Phantom, a remarkable gathering of stories, heritage, and people who continue to shape the future through a deep respect for tradition.

For Santo Wines, this evening held special meaning, as it formed part of our collaboration as an official partner of the Rolls-Royce Enthusiasts' Club publication 100 Years of the Phantom, published by St James's House. It was an opportunity to share our own story, that of Santorini vineyard, the people of our Cooperative, and a winemaking heritage that has evolved through generations.

Because whether it is an iconic automobile or a historic vineyard, true value lies in timelessness, consistency, and stories that endure.

An evening that reminded us that the most powerful stories are the ones that continue to be written..

Μερικές βραδιές μένουν αληθινά ανεξίτηλες στη μνήμη. ⚜️

Μία από αυτές ήταν η βραδιά αφιερωμένη στoν εορτασμό της έκδοσης του 100 Years of the Phantom, μια ξεχωριστή συνάντηση ιστοριών, κληρονομιάς και ανθρώπων που συνεχίζουν να διαμορφώνουν το μέλλον μέσα από τον σεβασμό στην παράδοση.

Για τη Santo Wines, η βραδιά αυτή είχε ιδιαίτερη σημασία, καθώς αποτέλεσε μέρος της συνεργασίας μας ως επίσημου συνεργάτη της επετειακής έκδοσης 100 Years of the Phantom του Rolls-Royce Enthusiasts' Club, που εκδόθηκε από τον οίκο St James's House. Υπάρχουν άνθρωποι στον Συνεταιρισμό μας που βρίσκονται καθημερινά πίσω από τη λειτουργία του οινοποιείου και φροντίζουν ώστε όλα να κινούνται με συνέπεια, ρυθμό και ευθύνη.

Ο Χρήστος βρίσκεται στη Santo Wines εδώ και 16 χρόνια, αποτελώντας σταθερό μέλος της ομάδας μας. Με εμπειρία, αφοσίωση και καθημερινή παρουσία, συμβάλλει ουσιαστικά στη λειτουργία και τις ανάγκες της παραγωγικής δραστηριότητας μας.

Ξέρει καλά πως πίσω από κάθε φιάλη υπάρχει μια ολόκληρη αλυσίδα ανθρώπων και δουλειάς που δεν φαίνεται πάντα, αλλά είναι απαραίτητη για να φτάσει το αποτέλεσμα ολοκληρωμένο στο ποτήρι σας.

Capers, caper leaves, Aidani grape preserve, and PDO Santorini tomato jam are some of the authentic flavors now joining Santo Roots, carrying the volcanic character and essence of Santorini through products born exclusively on our island.

An evolution that reflects the philosophy and vision of our Cooperative, bringing together under one shared aesthetic the local produce, and heritage of the Santorini's land.

Aσύρτικο 1993 🕰️: Η δύναμη του χρόνου μέσα από 33 έτη.

Κάποια κρασιά με τα χρόνια εξελίσσονται. Και κάποια άλλα αποκαλύπτουν μια εντελώς διαφορετική διάσταση του τόπου και της ποικιλίας τους.

Μια Σαντορίνη που αποτελεί σπάνια έκφραση της δυναμικής παλαίωσης του τοπικού αμπελώνα, που 33 χρόνια μετά, συνεχίζει να αφηγείται το ηφαιστειακό terroir με τρόπο μοναδικό.

▪️ Οινοποίηση: 100% Ασύρτικο δεξαμενής.

▪️ Χρώμα: Έντονο χρυσαφί, με κεχριμπαρένιες ανταύγειες και υψηλή ένταση.

▪️ Αρώματα: Μέτρια προς υψηλή αρωματική ένταση, με νότες ώριμου πυρηνόκαρπου, κουμκουάτ και γλυκού σταφυλιού.

▪️ Στόμα: Γεμάτο σώμα και υψηλή οξύτητα που διατηρεί το κρασί ζωντανό ακόμη και μετά από 33 χρόνια. Κυριαρχούν οι ελαφρώς καβουρδισμένοι ξηροί καρποί, το αμύγδαλο και η μακαντέμια, ενώ η φρουτώδης διάσταση της μύτης δίνει σταδιακά τη θέση της σε πιο μεταλλικά και αλμυρά στοιχεία.

▪️ Επίγευση: Μακρά, ευχάριστη και χαρακτηριστικά αλμυρή, θυμίζοντας θαλασσινή αλμύρα.

Τριάντα τρία χρόνια μετά, το Ασύρτικο συνεχίζει να αποδεικνύει πως ο χρόνος, στη Σαντορίνη, λειτουργεί διαφορετικά..

Some wines evolve over time. Others reveal an entirely different dimension of their variety and origin.

This Santorini label stands as a rare expression of the ageing potential of the local vineyard, that even after 33 years, continues to tell our volcanic terroir story in a remarkable way.

▪️ Winemaking: 100% stainless steel Assyrtiko.

▪️ Color: Deep golden, with amber reflections and high intensity.

▪️ Aromas: Medium plus aromatic intensity, with notes of ripe stone fruit, kumquat, and sweet grape.

▪️ Palate: Full-bodied, with high acidity that keeps the wine vibrant even after 33 years. Lightly roasted nuts, almond, and macadamia dominate the palate, while the fruit-driven character of the nose gradually gives way to more mineral and saline notes.

▪️ Finish: Long, pleasant, and distinctly saline, reminiscent of sea salt and sea breeze.

Thirty-three years later, this Assyrtiko continues to prove that time works differently in Santorini..

Με μεγάλη χαρά συμμετείχαμε στο μεγαλύτερη έκθεση της Μεσογείου που πραγματοποιήθηκε στο Ηράκλειο Κρήτης, έναν σημαντικό θεσμό αφιερωμένο στον κόσμο του ελαιολάδου, της γαστρονομίας και της ελληνικής παραγωγής.

Στο πλαίσιο της παρουσίας μας, είχαμε την ευκαιρία να παρουσιάσουμε τη σειρά Eξαιρετικών Παρθένων Ελαιολάδων Santo Roots και τη σύνδεσή τους με το ηφαιστειακό terroir της Σαντορίνης.

Θα θέλαμε να ευχαριστήσουμε θερμά την Περιφέρεια Νοτίου Αιγαίου για τη φιλοξενία και την υποστήριξη στο περίπτερό της, δίνοντάς μας τη δυνατότητα να εκπροσωπήσουμε τη Σαντορίνη και τα προϊόντα του Συνεταιρισμού μας σε έναν τόσο σημαντικό θεσμό.

Santo Wines at the 11th Olive Oil & Olive Festival. 🕊️

We were delighted to participate in the largest Mediterranean fair held in Heraklion Crete, an important event dedicated to olive oil, gastronomy, and Greek production.

Through our participation, we had the opportunity to present the Santo Roots range of Εxtra Virgin Olive Oils and their connection to Santorini’s volcanic terroir.

We would especially like to thank the South Aegean Region for hosting and supporting us at its booth, giving us the opportunity to represent Santorini and the products of our Cooperative at such an important institution.
