Travel with critic Susannah Smith into the limestone mountains of western Macedonia, to Velvendós and Siátista, just 40 miles east of Náoussa but 2,000 feet higher up. "Here, in the mountains, xinómavro sings in a higher register," writes Smith, "a clean, piercing note of cherries and fractured limestone, textured with fine, chalky tannins."
