[科學飲啡]

喺執笠之後,我哋有諗過最後呢段時間有乜可以做,於是我哋打算周圍飲啡推介吓咁,但又慣咗乜嘢都要check,不如就直頭剩係check TDS,唔寫評分,得出嘅結論都幾有趣:例如TDS都有地區差異,有啲區TDS普遍都會高啲,以下係我哋嘅前設。

我哋係全自費去買啡,我哋喺買之前唔會同咖啡師講我哋用意(以免有偏差,抱歉可能會冒犯到咖啡師),喺記完數之後我哋先會反映返測到嘅TDS同我哋嘅tasting notes(盡量唔用內容詞)。除咗兩位店主之外我哋會帶多個白紙嘅朋友去盡量消除偏見或者cellar palate。我哋剩係記錄咗TDS,tasting notes,唔會打分。

器材我哋用Atago,以室溫嘅TDS為準,每個sample會check 5次,每間舖我哋會check 1) House espresso 2) Washed process(盡量)嘅 Filter Coffee。Check espresso我哋無落filter,原因我哋想test杯espresso飲落去嘅TDS,同埋有data support unfiltered同filtered其實一樣可靠(兩者一致地有1% difference),再加上我哋真係好窮…

最後戴返個頭盔,我哋並唔係想挑機,TDS亦都唔完全反映一杯啡嘅質素。只係我哋喺數據同味道之間好明顯搵到對照,希望比個大家另一個角度去飲啡。

[北歐啡遊1: 文化差異]
而家三位店主都各自喺唔同嘅地方,其中一位去咗北歐啡遊,去飲北歐啡當然要去TimWendelboe 啦~

當年初初做Barista第一次飲嘅filter就係TimWendelboe嘅Kenya Karagato,都好慶幸呢隻豆係我嘅first coffee,係佢教識我原來咖啡唔係得商業咖啡嘅燶味,咖啡嘅酸爆起上嚟同果汁一樣,又兼有body同甜度。

比起香港滿地都係精品咖啡店,Oslo出名嘅舖可以話十隻手指都數得曬。喺呢邊精品咖啡係好平民,大約40-50 NOK 就可以買到一杯filter。沖煮上佢哋會偏向用一啲比較穩定嘅手法,例如TimWendleboe會用14:200 Aeropress,我住宿附近嘅my ugly baby係用手沖機出啡,變相嗰側重點會喺曬啲豆嘅quality 上面。

我會話喺北歐你未必會飲到一杯會令人驚艷嘅咖啡,但你好易就會飲到一杯風味分明而唔錯咖啡。(頭盔:香港都有好多好飲嘅舖頭,不過想飲北歐豆就推薦去 .coffeebar )

與各位道別。
Good bye to all.

從2020年十月到2022年二月,就一間咖啡店嚟講,係一件好短好短嘅時間。但係多謝眾人嘅厚愛,我地可以喺度做好多實驗。
As a coffee shop, we only stand from Oct 2020 to Feb 2022, which is a very short period of time. We are so gratitude for everyone, who let us conduct different types of experiments.

由每個月轉唔同roaster,到玩唔同手既沖法/沖煮工具,大家不嫌其煩聽咁我地講唔同嘅咖啡故事。希望我地曾經帶到唔同嘅咖啡體驗比大家。
From changing different roasters, to different brewing methods / brewing equipments, and listen to the coffee stories that bring by us from around the world. We hope that, we brought a different coffee experience to you, once.

我地計劃會有唔同嘅活動,搞過讀書會,電影分享會,賣過下書。可惜持久唔到,亦都希望呢度為大家體驗過不一樣嘅上水。
We planned numerous activities, reading group, screening, selling books, sadly, they don’t last. Also, we hope that, we brought a different sheung shui here, once.

話說前頭,我地非因疫症而結業,亦非因經營伙伴問題,亦無計劃再係香港開其他分店。只係計劃趕唔上變化,店主各自有不一樣嘅計劃,是故 Narrative Workshop會喺28/2/2022正式完結。
To clarify, we don’t end because of the Covid, nor managing issue. And we are not planning to start another store in Hong Kong. Just because of different plannings among us, therefore Narrative Workshop ended on 28/2/2022.

在最後,我地唔多人睇,但係都想同大家推薦一直而來既合作夥伴同埋我地幾欣賞嘅啡店;
