“Earlier this month, l hosted an educational high-protein vegetarian cooking class with !

I shared some of my go-to tricks for making plant-based meals nutritious, fun and delicious with these wonderful attendees!

We cooked

🥦Sprouted mung bean and crispy quinoa salad

🥦Claypot-style Sichuan eggplant with locally produced tempeh from my trusted partners at SpiceBox Organics and fresh peppercorn direct from Sichuan

🥦Whole grains - bulgur

🥦Vegan chocolate mousse (nut-free, gluten-free)
