Currently our Zefír is fermenting on the skins and we are doing punch-down by hand (literally!) 😉✋🤚 Punch-down is when we break up the cap of skins and solids that forms over during fermentation. We don’t want the cap to dry out, as this wouldn’t allow the juice to have the skin contact it needs for the extraction of tannins, aromas and color. The idea is to submerge the cap to increase skin-to-juice contact.

Where would you go if you could travel anywhere right now? A glass of “Távoli Világ” (Faraway world)
makes you discover Australia, Chile, Argentina, California and Italy – sip by sip.
By the last sip you may easily come to the conclusion that the best Shiraz, Carménère, Malbec, Zinfandel and Sangiovese are growing in the most beautiful wine region of the world, on the slopes of Lake Fertő (wine growing region of Sopron).
For the past few years the Pfneisl Estate has been growing varieties that are considered exotic in Hungary.
Birgit Pfneisl first encountered these varieties during her years in internship. Once back home on her own estate, she grew to love them and exploit their true characteristics.

We are in the middle of flowering stage. Which is - when grapevines pollinate themselves. Did you know grapevines are hermaphroditic? This means they possess both male and female parts. They can transform into berries all by themselves! 🍇 But luckily in our vineyards a lot of busy bees are helping 🐝

It’s a stormy spring day at „Fertő tó” (Lake Neusiedl). The lake is the largest endorheic lake in Central Europe, straddling the Austrian–Hungarian border. Most of the lake is surrounded by reeds which serve as a habitat for wildlife and are harvested in winter as soon as the ice is solid enough.
