🦋 Springerle: Where beauty and hard work meets.
This Swiss-German cake is made in a carved form after weeks of work. After long mixing and kneading, the dough was pressed into the molds one by one by the Southern German and Swiss women weeks before Easter and Christmas, and then left to rest on anise seeds until the next day, then baked. The cakes, which are considered paintings, originally depicted biblical scenes and characters. The springer was traditionally flavored with anise and lemon, and if necessary, it was stored for one or two months, as it did not go rancid due to the lack of fat. In the most ideal case, it was consumed with coffee and tea after three weeks of aging, with the inside texture turning out like marzipan.
Along with the Sicilian lemon biscuit and the English shortbread, it is the best tea cake by my opinion. They'll dry until tomorrow, then I'll be back with the baking!
🦋 Springerle: ahol a szépség és a kőkemény munka találkozik.
Ez a svájci - német sütemény hetek hosszú munkájával faragott formákban készül. Hosszas keverés és gyúrás után egyesével nyomkodták bele a tésztát a délnémet és svájci asszonyok a formákba húsvét és karácsony előtt hetekkel, hogy aztán másnapig ánizsmagon pihentessék, majd kisüssék. A festményszámba menő sütemények eredetileg bibliai jeleneteket és szereplőket ábrázoltak. A springerlét hagyományosan ánizzsal és citrommal ízesítették, és szükség esetén egy-két hónapig is tárolták, hiszen zsiradék hiányában nem avasodott meg. A legideálisabb esetben három hét érlelés után, marcipánossá váló belsővel fogyasztották kávé és tea mellé.
A szicíliai citromos keksz és az angol shortbread mellett szerintem a legjobb teasütemény.
Holnapig száradnak, aztán jövök a sütéssel!
