There’s something magical about the Matilda cake — that tall, ultra-moist chocolate cake with layers of rich frosting that looks almost too good to be true.

This version turned out incredibly soft and fudgy, with a frosting that wasn’t overly chocolatey, but still dangerously delicious. It’s the kind of cake that makes you close your eyes on the first bite!🍫✨

Ah, the dreaded CROISSANT 🥐
I’ve been trying to master making croissants at home — with a basic home oven, unregulated temperature, and no proofer — for what feels like forever!

This time, the process actually went surprisingly smoothly. The folding and rolling were so much better than my previous attempts — I was genuinely proud of how far I’d come and felt sure these were going to turn out perfectly 🥲

It’s still far from perfect. And I keep telling myself I won’t put myself through it again — but the frustration of not getting it just right always pulls me back in 🫠
This batch had beautiful layers, was super flaky, and tasted amazing — but that elusive honeycomb interior? Still chasing it 😭

Ah, the dreaded CROISSANT 🥐
I’ve been trying to master making croissants at home — with a basic home oven, unregulated temperature, and no proofer — for what feels like forever!

What began as a simple almond tart idea slowly transformed into something far more indulgent. At the base, a buttery almond tart shell—rich, golden, and just the right amount of crumbly. Nestled inside, a soft almond and orange frangipane, baked until gently puffed and fragrant. Then came a layer of roasted strawberry jam, its sweetness deepened with caramelised edges and a hint of tang. Over that, a generous swirl of vanilla crème pâtissière—silky, smooth, and comforting like a custard hug. And finally, because too much is never enough, a cloud-like topping of vanilla crème chantilly to finish it all off.

One spoonful in, and it’s a full-on flavour symphony—nutty, fruity, creamy, dreamy 🍓🥧🍊

1- Macerated Kyoho grapes, coconut sorbet, black garlic crémeux, chocolate sugar tuile and a cherry sorbet to finish 🍒🥥🍫
2- A match macaron with a matcha white chocolate ganache and a yuzu jelly 🍵 🍋
