DESSERT RECIPE SERIES


**BAVAROISE HOPYES**

Bahan:
1. Agar-agar bubuk 1 bungkus
2. Putih Telur 4 butir, kocok hingga kaku
3. Gula Pasir 100 g
4. Susu 200 cc
5. Kuning Telur 2 butir
6. Essence Mocca
7. Kismis
8. Karamel
• Air 200cc
• Gula Pasir 75 g

Cara Membuat:
1. Membuat Karamel, Panaskan gula pasir hingga kecoklatan, masukkan air, didihkan sambil diaduk.
2. Oles cetakan pudding dengan mentega, hias bagian dasar cetakan dengan kismis.
3. Masak susu, gula, agar-agar dalam air hingga mendidih, campurkan caramel ke dalamnya.
4. Aduk kuning telur, tuangi agar-agar panas sedikit demi sedikit, tambahkan essence mocca.
5. Masukkan agar-agar pada kocokan putih telur sambil diaduk kuat, tambahkan kismis.
6. Masukkan dalam cetakan pudding
7. Sajikan dalam dessert plate atau compote bowl dilengkapi vanilla sauce


**BAVAROISE HOPYES**

Ingredients:
1. Agar-agar powder 1 packet
2. Egg White 4 items, beat until stiff
3. Sugar 100 g
4. Milk 200 cc
5. Egg Yolk 2 eggs
6. Essence Mocca
7. Raisins
8. caramel
• Air 200cc
• Sugar 75 g

How To Make:
1. Make caramel, Heat sugar until golden, enter the water, bring to a boil while stirring.
2. Rub the butter pudding mold, decorative piece mold base with raisins.
3. Cook the milk, sugar, gelatin in water until boiling, mix the caramel into it.
4. Stir in the egg yolks, pour the gelatin heat little by little, add the essence mocca.
5. Enter the gelatin on whisk the egg whites while vigorous stirring, add the raisins.
6. Enter in the pudding mold
7. Serve in dessert plate or bowl compote include vanilla sauce.

**UDANG TUMIS HIJAU **

Bahan :
500gr udang ukuran sedang, kupas, sisakan ekornya, sayat bagian punggung
3 siung bawang putih, cincang halus
1 buah bawang bombai, iris kasar
2 buah tomat hijau, potong-potong
5 buah cabai hijau keriting, iris serong tipis
5 buah cabai rawit hijau, iris serong tipis
1 batang bawang daun, iris serong
½ sdt garam
1sdm gula pasir
1/5 kaldu instan(jika s**a)
100ml air
3sdm minyak, untuk menumis

Cara Membuat :
Tumis bawang putih dan bawang bombai hingga harum
Mas**an udang, tomat, dan cabai. Aduk hingga uang berubah warna
Tambahkan air dan bumbu lainnya. Masak hingga kuah habis dan bumbu meresap

Saute SHRIMP GREEN

Material :
500gr medium-size shrimp, peeled, leaving its tail, slice the back
3 garlic cloves, finely chopped
1 onion, sliced
2 green tomatoes, cut into pieces
5 curly green chilies, sliced thin oblique
5 pieces of green chili, thinly sliced oblique
1 stalk scallion, sliced oblique
½ tsp salt
1sdm sugar
Instant broth 1/5 (if desired)
100ml water
3sdm oil, for frying

How to make :
Sauté garlic and onion until fragrant
Put shrimp, tomatoes, and peppers. Stir until money changes color

** TUMIS ONCOM LEUNCA **
Bahan :
2 buah oncom, tumbuk kasar
150gr leunca, buang tangkainya
2 batang bawang daun, iris 1cm
1 ikat kemangi, ambildaunnya
2 buah daun salam
1cm lengkuas, memarkan
1sdm gula pasir
500ml air
3sdm minyak, untuk menumis

Bumbu Yang Dihaluskan ;
8 butir bawang merah
4 siung bawang putih
4cm kencur
8 buah cabai merah keriting
3 buah cabai rawit
2sdt garam

Cara Membuat :
Tumis bumbu yang dihaluskan hingga harum. Mas**an oncom, daun saam, dan lengkuas. Aduk rata
Tuangkan air, biarkan hingga mendidih
Mas**an leunca, bawang daun, dan gula.masak hingga air habis
Mas**an kemangi, aduk sebentar. Angkat, sajikan


Saute oncom Leunca
Ingredients:
2 pieces oncom, roughly mash
150gr leunca, discard stalks
2 stalks scallion, sliced 1cm
1 bunch basil, ambildaunnya
2 pieces bay leaves
1cm galangal, crushed
1sdm sugar
500ml water
3sdm oil, for frying

Softened seasoning ;
8 red onions
4 cloves garlic
4cm kencur
8 curly red chilies
3 pieces of cayenne pepper
2sdt salt

How to make :
Stir-fry until fragrant spices are blended. Put oncom, saam leaves, and galangal. Stir well
Pour water, allow it to boil
Put leunca, scallion, and gula.masak until water runs out
Put the basil, stir briefly. Remove and serve

Bahan :
150gr udang ukuran sedang, kupas, sisakan ekornya, sayat punggungnya
75gr bunga sedap malam kering, rendam air panas
5 buah jamur kuping kering,rendam air panas
150gr bengkuang, kupas, iris seperti batang korek api
1 batang bawang daun, iris serong
1 batang seledri, iris kasar
800ml air
Bumbu Yang Dihaluskan :
2 siung bawang putih
8 bua merica butiran
1½ sdt garam
¼ sdtkaldu instan (jika s**a)
Cara Membuat :
Mas**an bumbu ke dalam air, rebus hingga menddih
Mas**an sayuran dan udang. Masak hingga semua bahan matang dan bumbu meresap. Angkat, sajikan dalam keadaan hangat

Ingredients:
150gr medium-size shrimp, peeled, leaving its tail, slice back
75gr tuberose flowers dry, scalded
5 pieces of dried mushroom, scalded
150gr yam, peeled, sliced like a matchstick

800ml water

Bumbu :

1 buah bawang bombai, iris tipis
6 buah cabai merah keriting, iris serong tipis
2cm lengkuas,memarkan
2 lembar daun salam
2sdm kecap manis
1sdt garam
1sdt gula pasir
¼ sdt kaldu instan (jika s**a)
Cara Membuat :
Tumis bawang merah, bawang putih, bawang bombai hingga harum. Tambahkan cabai mera, lengkuas, dan daun salam. Tumis hingga layu
Mas**an tempe, tumis hingga setengah matang
Mas**an kacang panjang, air, dan bumbu lainnya. Masak hingga semua bahan matang dan air habis. Angkat, sajikan

Material :
200gr beans, sliced 3cm
200gr temp, small rectangular slices
250ml water
3sdm oil, for frying
seasoning:
5 red onions, thinly sliced
4 cloves garlic, thinly sliced
1 onion, thinly sliced
6 curly red chilies, sliced thin oblique
2cm ginger, crushed
2 bay leaves
2sdm soy sauce
1sdt salt
1sdt sugar
¼ tsp instant broth (if desired)
How to make :
Saute onion, garlic, onion until fragrant. Add mera chili, ginger, and bay leaves. Saute until wilted
Put tempeh, stir-fry until half cooked
Put beans, water, and other spices. Cook until all ingredients cooked and the water runs out. Remove and serve

500gr cumi, buang tinta pada kulitnya, cuci, sayat-sayat, lalu potong-potong
100gm wortel, potong serong tipis
100gr sawi hijau, potong-potong
1 batang bawang daun, iris serong
400ml air
1sdm tepung maizena, larutkan dalam 50ml air
3sdm minyak, untuk menumis

Bumbu :
3 siung bawang putih, cincang halus
½ buah bawang bombai, potong segitga
2 buah cabai merah keriting, iris tipis
2cm jahe, memarkan
3sdm saus tiram
1sdm kecap manis
1sdt garam
1sdt gula pasir
¼ sdt kaldu instan (jika s**a)
Cara Membuat :
Tumis bawang putih dan bawang bombai hingga layu
Mas**an cumi dan bumbu lainnya. Aduk-aduk
Mas**an air, wortel, dan bawang daun masak hingga semua bahan matang
Tambahkan sawi hijau, aduk hingga layu
Tuangkan larutan maizena, aduk hingga kuah kental. Angkat, sajikan panas

OYSTER SAUCE squid
Material :
500gr squid, waste ink on his skin, wash, slice-slice, then cut into pieces

Put water, carrot, and leek and cook until all ingredients cooked
Add mustard greens, stirring until wilted
