🐌🇮🇪 Who would have thought that a little snail could take me around the world! 🌎

When I started this journey, I never imagined that my snails would be the reason I'd get to travel the world.

Having our snails served in the world's No. 1 ranked restaurant, and three of the world's top 10, was an incredibly proud moment for me.

But travelling all the way from our little farm in Cavan to Florida, seeing our snails being prepared and served to some incredible chefs, and hearing them described as some of the tastiest snails in the world... well, that's something I'll never forget.

It's moments like these that make all the hard work worthwhile.

🇺🇸 Thank you, Florida! What an incredible and memorable trip. The welcome, the people, the chefs and the opportunities have been something special.

And by the looks of things, this is only the beginning of our journey in Florida! 🤝🐌

I'll certainly be seeing you again very soon!

A bit surreal to be travelling overseas again today with my snails.

After years of learning, testing, failing, improving and developing our own methods of farming at Inis Escargot, it's a strange feeling to now be working alongside scientists, microbiologists and specialists from different areas of agriculture and food production.

Having those methods independently looked at, tested and proven, and then seeing genuinely qualified people excited about working with them and putting them into action, is something I'm very proud of.

Still plenty to learn and plenty of work ahead, but days like today make you realise how far a small idea can travel.

🐌 Purging Season Is Almost Here!

After months of hard work, careful management and dedication, we’re approaching one of the final and most important stages of the snail farming season — purging.

This is where all that hard work comes together. It may seem like a simple step, but getting it right is absolutely essential to producing a clean, healthy, premium-quality snail ready for hibernation, processing or market.

At Inis Escargot, we’ve spent years perfecting our methods through hands-on experience, season after season. My advice to farmers is simple: don’t overlook the final hurdle after putting so much work into getting your snails this far.

If you’re approaching purging and have any questions at all, reach out. We’re always happy to share advice and help farmers get this crucial stage right.

The hard work is nearly done. Now let’s finish the season properly. 🐌💪

What makes an ingredient truly exceptional?

For me, it has never been about rarity or prestige.

It's about the thousands of small decisions made long before that ingredient ever reaches a chef's hands.

Every day on our farm in Ireland, we're focused on producing escargot with consistency, patience and respect for the natural process. There are no shortcuts—because quality isn't something you add at the end. It's built from the very beginning.

Seeing our escargot featured on the menus of three of the world's top ten restaurants has been an incredible milestone , but it doesn't change how we work tomorrow morning. We still begin each day with the same goal: producing the very best escargot we can.

As we introduce Inis Escargot to more chefs, hotels and hospitality partners around the world, we're proud to share not just a product, but the story behind it.

After all, every exceptional dish starts with an exceptional ingredient.
