"The Irish aqua vita, vulgarly called usquebaugh, is held the best in the world of that kind; which is made also in England, but nothing so good as that which is brought out of Ireland. And the usquebaugh is preferred before our aqua vita because the mingling of raisins, fennel-seed, & other things, mitigating the heat & making the taste pleasant, makes it less inflame, & yet refresh the weak stomach with moderate heat & a good relish. These drinks the English-Irish drink largely, & in many families -especially at feasts-both men & women use excess therein. And since I have in part seen, & often heard from others' experience, that some gentlewomen were so free in this excess as they would, kneeling upon the knee & otherwise, carouse health after health with men; not to speak of the wives of Irish lords or to refer it to the due place, who often drink till they be drunken, or at least till they void urine in full assemblies of men."

An excerpt from the man behind fantastic piece of 'the Whiskeys of Ireland'
Richard Stanihurst (or Stanyhurst) was born in Dublin in 1547, the son of James Stanihurst (d.1573), speaker of the Irish House of Commons.

Stanihurst in his De Rebus in Hibernia Gestis mentions that he attended school at Peter White's academy in Kilkenny after which he studied at University College, Oxford, and graduated with a Bachelor of Arts degree in 1568. He published his first work, a Latin commentary on Porphyry in 1570 which was remarked upon for its scholarship by scholars of the time.

At Oxford he had met Edmund Campion, and he accompanied the latter on his visit to Ireland, helping him to collect material for his history of Ireland. He himself contributed the "Description of Ireland" and the "History of Ireland under Henry VIII", to Raphael Holinshed's Chronicles (London, 1577). In Ireland he tutored the children of Gerald, the 11th earl of Kildare, especially Garret whom he accompanied to London in 1575; the tutorship ended with Garret's death in 1580.

Royal Usquebaugh c. 1757 UK.

"Take of Cinnamon, Ginger & Coriander-seed, of each three Ounces; Nutmegs four Ounces & a Half; Mace, Cloves & Cubebs each once Ounce & a Half.
Bruise these Ingredients & put them into an Alembic with eleven Gallons of Proof spirit, & two Gallons of Water; & distil till the Faints begin to rise; fastening four ounces & a half of English Saffron tied in a cloth to the end of the worm.
Take Raisins stoned four Pounds, & a Half; Dates three Pounds, Liquorice root sliced two Pounds; digest these twelve hours in two gallons of water; strain out the clear Liquor, add it to that obtained by Distillation, & dulcify the whole with fine Sugar.
Approximately yields 10 gallons. "
Usquebaugh anglicised, simply means yellow water. Derived from the colouration the located in the worm of the still.
Similar to a modern gin production technique, botanicals steeped in spirit for compound distillation, whilst more delicate botanicals are located in perforated baskets high in the still for vapour infusion.
In Usquebaugh case, the positioning of the delicate saffron helps draw out pigments & flavour compounds late in the process.
