We’re looking for a Kitchen Manager / Sous Chef to help run the kitchen at Mani.

This is a hands-on role. You lead from the front, work the busy sections and keep the team sharp.

We’re a systems-driven kitchen. Speed, consistency and organisation are everything. You need to stay on top of prep, structure and standards at all times.

What we want:
• organised and sharp
• leads from the front
• calm under pressure
• understands systems
• high standards, no shortcuts
• no ego

Pizza experience is a bonus, not essential.

Still a bit in shock writing this…

Mani has just been named in Ireland’s Top 100 Restaurants for 2026 by John & Sally McKenna.

Two years in. That’s it.

To be on a list with some of the best restaurants in the country is honestly mad. Proper proud moment.

Massive credit to the team — Rory leading the kitchen, Lou running the floor, and every single person in Mani who shows up every day and puts the work in. This doesn’t happen without them.

We’ve built this place on good energy, proper food, and not taking ourselves too seriously… and to get recognised like this means everything.

Buzzing today. Really, really proud.

Last night was our soft launch in the new Mani.

We invited friends, family, the builders, and the people who helped us get here, just to put it all to the test. Everything was on us, and it felt like the perfect first run in our new home.

The team smashed it. Front of house were flying, kitchen were on fire, and the pizzas got unreal feedback. A lot of hard work went into this and last night felt special.

Big thanks to .ie , Andrew and Acky, for helping turn what was in my head into a reality.

Thanks to Mark McKay and all the team at McKay Construction too. Mark was a pleasure to work with and I couldn’t recommend him highly enough.he doesn’t have Instagram so I can’t tag him!

Thanks to our customers for all the support, our neighbours for being sound, and my wife and kids for sticking by me through it all.

And to myself too — the last 7 or 8 weeks were tough. Breaking my wrist, surgery, and trying to get this over the line wasn’t easy. I’m proud of myself. I earned this.

This is only the start.
