Foraging this week as August ends and September brings the Autumn bounty.

Love this time of year, early fungi popping their heads up in the grasslands and woods. Glistening jewels in the hedgerows, berries abundant. Blackberries, haws, sloes, rowan, rosehips, crab apples and elderberries.

Nettle seeds, common hogweed, mugwort, echinacea, Alexander seeds, wild carrot and rosemary cuttings.

Time to make our medicinal remedies to see us through the winter, stave off the seasonal sicknesses and boost our immune system.

Chicken of the woods one of the tastiest mushrooms.

Laetiporus is a genus of edible mushrooms found throughout much of the world. Some species, especially Laetiporus sulphureus, are commonly known as chicken of the woods, or sulphur shelf.

The chicken of the woods mushroom is most commonly found on wounds of trees, mostly oak, though it is also frequently found on eucalyptus, yew,  willow and sweet chestnut 🌰

If you find chicken of the woods on yew, be mindful to remove any yew needles that the polypore may have grown around. Some people have reactions to the COW especially if grown on the yew tree, so if you are trying this to eat, start with a tiny bit first and wait a day to make sure you have no adverse reactions.

Cook it well at least 10 minutes, I like to slice it up into smaller pieces and cook with olive oil, garlic and butter

Summer Salads 🥗 continued

So tasty and deliciously fresh for a hot evening.

Freshly picked Salad leaves, sliced nectarines, sliced homegrown red onions, green olives stuffed with lemon, Castelli ricotta cheese 250g tub, Sliced parma ham, sprigs of fresh thyme flowers, a small handful of candied walnuts. Dressed with local honey, balsamic vinegar, extra virgin olive oil, himalayan salt and cracked black pepper.

This was impromptu so I didn't take note of the exact amount of the ingredients. I was hoping to get goats cheese to crumble on top, however the local centra was sold out. A quick rethink led me to ricotta and a punnet of nectarines.

This is really easy and delicious.

Mojito Vibes with a foraged twist!

Fresh mint collected from my garden & the community garden, homemade Elderflower syrup to sweten.

Ingredients

White rum: 60ml (2 oz) light or silver rum
Fresh lime juice: 30ml (1 oz) freshly squeezed
Fresh mint: 8 to 10 leaves, plus a sprig for garnish
Sweetener: 2 tsp white sugar or 15ml (0.5 oz) simple syrup
(I used 3 tsp of my Elderflower & white rose syrup for these mojitos)
Fizzy top: Club soda or sparkling water, to taste
Ice: Cubed or crushed ice

Squeeze your limes, add slightly fresh crushed mint leaves 🍃 to your glass, add the lime juice, syrup and white rum. Crush the leaves with a spoon. Add lots of ice preferably crushed. Then top with soda water or sparkling water. Garnish with fresh mint flowers, a wedge of lime & a Mont bretia flower 🌼

Super refreshing and the perfect Summer cocktail 🍸
