MEET THE SPEAKER - ALISON WALSH

Alison Walsh is the Manager of the Food Industry Training Unit in UCC and joins us for the ‘Business of Wexford Food’ evening this Thursday 7th May 2026. Alison has extensive experience in supporting small and medium-sized businesses in Ireland for over 25 years. Drawing from her background in marketing, business development, and entrepreneurship, she has worked closely with entrepreneurs and business leaders to help them identify opportunities for growth and implement effective strategies to achieve their goals.

Across her career to date she has worked in both private and public sector roles in Ireland and abroad with Irish Distillers, Ford Motor Company, Enterprise Ireland, Munster Technological University and in the Local Enterprise Office in Cork County Council. Her expertise spans a range of areas, from strategy to business planning, sales and marketing, capability building and management development programme development.

Alison holds a BSc Food Business degree from University College Cork, MBA from Dublin City University and a postgraduate diploma in HRM from the IMI. She is passionate about supporting Irish business and entrepreneurs and is committed to helping businesses find solutions to support them to thrive in today’s ever-changing business landscape and delivering training and development programmes that build the key skills capability of employees and leaders of business.

She joins Ciaran McGann, Michael Murphy and Tracie Daly at this standout event where we also launch the University College Cork Food Diploma, followed by a ‘Meet and Mingle’ in the Food Studio with refreshments from Trudies Kitchen.

MEET THE SPEAKER - CIARAN MCGANN

Ciarán McGann, ’s Head of Manufacturing, Food & Fishing joins the line up for this event this Thursday 7th May 2026 and he has over twenty years in the financial services sector to share. Ciarán is passionate about supporting SME’s and has provided numerous businesses to secure financial solutions to drive growth and success. A strong advocate for sustainable finance, Ciarán has served as the Sustainability Champion for Business Banking at AIB. Ciarán completed a Level 9 Graduate Diploma in Sustainable Finance and ESG Reporting at UCD, reinforcing his commitment to integrating sustainability into financial strategies.

MEET THE SPEAKER - TRACIE DALY

Tracie Daly is a Food Business Coach and an award-winning entrepreneur with extensive experience in both the food and education sectors. From the very beginning, food has been the cornerstone of Tracie Daly’s life. Her progression to becoming a food business coach was a natural evolution of this lifelong passion. Her unique blend of culinary knowledge and business acumen allows her to design and execute bespoke food business models, empowering food business owners to transform and grow their enterprises.

Tracie Daly is a qualified executive business coach, chef, and food safety advisor. Tracie is also a regular on Ireland’s national food festival circuit, appearing on stage at leading events such as the Waterford Festival of Food, Ballymaloe Festival of Food, Sligo Food Festival and Savour Kilkenny. Tracie works with Darina Allen and Rory O’Connell at Ballymaloe Country House & Cookery School and with their Ballymaloe Foods brand.

She joins Ciarán McGann, Michael Murphy, and the launch of the University College Cork Food Diploma, followed by a ‘Meet and Mingle’ in the Food Studio with refreshments from Trudies Kitchen.
