🍪✨ Yellowbird Bakes — Reopening Day ✨🍪

First and foremost, a heartfelt thank you to the Quinn family for your kindness, support, and belief in Yellowbird Bakes. Your help has meant so much during this transition.

A warm thank you to the Kennedy’s team and the wonderful team at Bourbon Bar for welcoming us and supporting this next step. We’re so grateful to be sharing a space with such good people.

Behind the scenes, the bakery has been coming back to life — planning, prepping, and filling the kitchen with the sweet smell of cookies, macarons, and all the treats Yellowbird is known for. After all the work and all the waiting, we’re finally ready.

Yellowbird Bakes is reopening inside Bourbon Bar at Rockwood Parade, and I honestly can’t wait to share this new beginning with you.

🎉 Sligo Community Heritage Launch Night! 🎉

We had a great night Tuesday night as we gathered for the launch of the Sligo Community Heritage archives. What a fantastic achievement for our groups; Achonry Mullinabreena Enhancement, Ballisodare and District Heritage, Ballymote Heritage Group and Rosses Point Heritage. 👏

The launch was officiated by Cathaoirleach of Sligo County Council, Donal Gilroy with speeches by Siobhán Ryan, Sligo County Council Heritage Officer and Lorna Elms, Development Officer with iCAN.

We were then treated to a rendition of The Canon’s Dream (The Boys of Ballisodare) by John Conlon from Ballisodare before each group took to the podium to share their work, their plans for the future and what they've gained since joining the iCAN network.

I’ve just received the news that Cashsavers will be closing at the end of the month, which means I’ll be losing my little bakery space too. It’s not something I expected to be facing so early in the year, and I’m still taking it all in.

While I don’t yet know what the next chapter looks like, I do know how proud I am of what Yellowbird has become—and that’s entirely thanks to you. Your support, kindness, and enthusiasm have meant the world to me.

I still have three weeks left in the kitchen, and I’ll be using up every last ingredient—so expect plenty of new recipes, surprise bakes, and sweet experiments as we go. If you’ve got a Yellowbird voucher, now’s the perfect time to pop in and treat yourself.

And if you happen to know of anywhere—or anyone in Sligo with a commercial kitchen space—please do message me. I’d be so grateful for any leads or ideas.
