Mahesh Edible Oil Industries was constituted on the 30th June 1990 as a Partnership Firm to carry on the business of manufacturing and sale of mustard oil and mustard cake. h. The firm set up its manufacturing unit in the first year of its operations and started marketing its products under the brand name SALONI. On 31.03.2000 the Firm was converted in to a Company Limited by Shares under the name and style of Mahesh Edible Oil Industries Ltd. Under Part IX of the Companies Act, 1956 and the business carried on as a partnership firm is henceforth being carried on as a Limited Company w.e.f.01.04.2000. Over a period of twenty years SALONI has become a leading mustard oil brand in the country and has achieved wide acceptability in the market which is evident from the growth in sales and increase in production capacity from 84924 TPA in 2008-09 to 103824 TPA in 2009-10 with a compounded growth of approx.29% in Turnover. The Company is now one of the three main producers of mustard oil in the Country.

Here is a fun and easy recipe to try this Summer.
Mango Rice Ingredients
• 1 cup of cooked rice
• 1/2 cup of raw mango (grated)
• 1/2tsp of mustard
• 1/2 tsp of urad dal
• 1/2 tsp of channa dal
• 1 tsp of groundnut
• 2 green chilli
• 1 curry leaves
• 1/4 tsp of sprig turmeric powder
• 3 tsp of Saloni oil
• Salt to taste
Procedure
• In a pan add Saloni oil and mustard seeds. Once the mustard starts to crackle add urad dal, channa dal and green chilli. Now add curry leaves, asafoetida and turmeric powder.
• Grate raw mango and keep ready.
• Cook and cool the rice completely.
• Add the tempering and grated mango with salt to taste.
• Mix well.
• Mango Rice is ready. Serve with any chips.

Amla Mirch ki Achari Subzi

Ingredients:
2 cups Indian Gooseberry or Amla, 5 to 6 green chilies, 2 tbsp mustard oil, ½ tsp turmeric powder, 1 tsp red chili powder, 1 tsp coriander powder, 1 tsp sugar, salt to taste, cumin seeds ½ tsp, fenugreek seeds ½ tsp, fennel seeds ½ tsp, asafoetida ¼ tsp.

Method:
Wash amla and cook in the pressure cooker with a glass of water.Steam it untill tender and then drain the water. Gently press the amla to separate the wedges, remove the seeds. Wash green chilies and chop them. Heat mustard oil in a pan and add cumin, fenugreek, fennel and asafetida to the oil. Add turmeric, salt and sugar and stir well. Cover the pan and cook for 5 to 7 minutes. Serve with rice, roti or any bread of your choice.

Green Chili Pickle in Mustard Oil
Ingredients:
2 cups green chilies, 2 tsp dry mango powder, 1 tsp coriander powder, 1 tsp turmeric powder, 1 tsp sugar, salt to taste, 3 tbsp mustard oil, 2 tsp fennel seeds, 1 tsp mustard seeds, ½ tsp asafetida.
Method:
Wash the green chilies and then dry them well using a cloth napkin. Remove the stems and then chop chilies. Heat mustard oil in a heavy bottom pan. Then add mustard and fennel seeds in the medium hot oil. When seeds start crackling add asafoetida. Add turmeric and chopped green chilies. Stir fry for few seconds, add salt and mix well. Cover and cook for approx 2-3 minutes on low flame. Now remove the lid and add coriander powder, dry mango powder and sugar. Stir fry for a minute on low heat. Then remove from the flame. Refrigerate when it has cooled down completely. Serve along with poori,paratha or daal-rice to add a zest of tangy and spicy touch to your everyday meals.

Punjabi Chicken

Ingredients:
1 kg chicken, 3 to 4 tbsp mustard oil, five big onions, 2 tbsp ginger garlic paste, 4 green chilies, 1 big tomato finely chopped, 1 tsp whole garam masala, 2 tsp mustard seed paste, 1 tsp turmeric, 1 tsp sugar, salt to taste.
Method:
Wash and put the chicken pieces in a big bowl, add onion, ginger and garlic paste and mix well. Cover and set it aside for about an hour. Heat the pan, pour mustard oil and when it smolders, put the sugar and let it char. It will give a beautiful golden colour to the food. Now add the whole garam masala in the oil and let them crackle. Put the green chilies and fry a little.
Add chopped tomatoes and marinated chicken into the pan. Keep the heat low, and keep on frying. Toss and turn the chicken pieces, till the oil gets separated. Add salt and turmeric. When the chicken becomes golden in colour, add half cup of water. Cover the pan and let it simmer for about 20 minutes, make sure to toss and turn the chicken pieces in between. When you feel it is cooked, add the mustard seed pastes to the curry and mix it well. Let it boil for a minute and your dish is ready.
