“Hunter Style Gurda Kalegi” The story begins in a distant village, where the villagers, inspired by their nomadic ancestors, crafted a dish. It is said that the dish, known as Gurda Kalegi, originated from a culinary alchemist who sought to create a feast that mirrored the richness of the land.

The kidneys and liver, symbols of vitality and strength, were marinated with a blend of mystical spices—cumin for earthiness, coriander for warmth, and a touch of smokiness to evoke the essence of ancient fires.

Slow-cooked the ingredients over open flames, infusing the dish with the enchanting aroma of the hearth. As the Gurda Kalegi simmered, the village came alive with tales of valor, love, and the mystical connection between the people and the land.

At Jugni, we’ve embraced this folkloric tradition, recreating the Gurda Kalegi with the same reverence for storytelling. The story of Chuda Ghugni is a delightful narrative that unfolds in the heart of Bihar, a state in Eastern India rich in cultural diversity and culinary heritage.

Chuda, or flattened rice, has long been a staple in the households of Bihar/Jharkhand, finding its way into various traditional recipes. Ghugni, on the other hand, brings the warmth of whole Bengal gram, soaked and cooked to perfection, offering a protein-rich companion to the simplicity of chuda.

The tale begins with the rural kitchens of Bihar, where resourceful homemakers would craft wholesome meals using locally available ingredients. In this narrative, Chuda Ghugni emerges as a symbol of both sustenance and culinary ingenuity.

The preparation process is a dance of flavors and textures. Whole gram soaked overnight, transform into tender morsels that absorb the essence of spices and aromatics. In a separate act, chuda is fried on high heat ready to play its role in absorbing the vibrant amalgamation of tastes that is about to unfold.

The sizzle of mustard oil in the pan sets the stage, infusing its pungent aroma into the air. Onions follow, dancing into a golden embrace, and the symphony continues with the addition of ginger-garlic paste and green chilies, creating the aromatic base for the dish.
Turmeric, red chili powder, and a blend of ground coriander and cumin add their distinct notes, creating a melody of colors and flavors.
