Introducing Crimson’s latest cocktail collection — a jazz-inspired series of pours where flavour, texture, aroma and mood move in rhythm with one another.

From smoky silences and bright crescendos to tropical improvisations and velvet-smooth finishes, every glass is designed like a piece of music — layered, expressive and memorable long after the last sip.

Thoughtfully curated by Gourmet Sage Hospitality Solutions, the menu draws inspiration from the improvisation, depth and emotion of jazz itself — translating it into bold, contemporary cocktail storytelling.

At Gourmet Sage, we’ve always believed that restaurants must feel rooted before they feel remarkable.
With PETTI, that thought became the foundation.

Set inside a beautifully reimagined space designed by acclaimed architect Vinu Daniel and the team at Wallmakers, PETTI embraces raw honesty in both architecture and experience — sustainable materials, earthy textures, natural light, and a quiet sense of warmth that never tries too hard.

The idea was never to create something loud or intimidating.
Instead, the vision was simple: comforting food, familiar flavours, soulful hospitality, and a space that feels deeply connected to Thoothukudi and its people.

The menu stays intentionally non-pretentious — built around dishes that are approachable, nostalgic, comforting, and genuinely delicious, while respecting regional authenticity and everyday cravings.

In a time where many spaces compete for attention, PETTI was imagined to feel calm, grounded, and lasting.

Grateful to the clients for the trust, to every artisan and collaborator involved, and to the wonderful team that brought this space to life with heart and sincerity.

The past few months have been deeply immersive.

Two recent launches — PETTI and PARVA — each conceived with very different emotional and experiential directions, yet anchored by the same philosophy: thoughtful hospitality, clarity of identity, and timeless relevance over noise.

From concept shaping, menu curation and experience design to the countless invisible layers that go into building a restaurant meaningfully, both projects have been intense, nuanced and personally fulfilling journeys.

PETTI was also particularly special in many ways — including the opportunity to work alongside Vinu Daniel and the team at Wallmakers, whose architectural language carries a quiet originality of its own.

PARVA, on the other hand, was envisioned as a truly pan-Indian dining experience — bringing together dishes, flavours and inspirations from 23 different states across the country into one cohesive, contemporary narrative.

My sincere gratitude to the clients for placing immense trust in my process, perspective and guidance throughout.

And with several more projects currently underway across formats and cities, it continues to be an exciting time to observe how India’s dining landscape is evolving — becoming more aware, more design-conscious, and far more experience-led than ever before.

Guests admire cuisine.
They remember the connection.

In building restaurant brands end-to-end — from kitchen strategy to service culture — I’ve seen this repeatedly:

Food builds the business.
People build its memory.

Customer delight comes from:

* Genuine care
* Creating moments, not transactions
* Recovering mistakes with grace
* Being present. Aware. Watchful.

Years later, I still remember the names of wait staff across brands —
because of how they made me feel.

Hospitality is not about plates.

At the recent Customer Delight Workshop, I asked this question — and the pause in the room was telling.

Guests may admire cuisine.
But they remember the connection.

In my journey of helping build restaurant brands end-to-end — from kitchen strategy to service culture — one truth has remained consistent:

Food builds the business.
People build its memory.

Customer delight is rarely accidental. It comes from:
• Genuine care
• The intent to create memorable moments
• The maturity to recover mistakes gracefully
• Presence, watchfulness, awareness

Even today, I remember the names of wait staff from years ago across different brands — not because of what was on the plate, but because of how they made me feel.

Grateful to Mr Venkatesh for creating space for conversations that go beyond “service standards” and into human significance.
