Pictured here is an authentic “Kari Virundhu” @ Marutha Vilas, Madurai —a feast that celebrates the rich culinary heritage of Southern Tamil Nadu, served the traditional way on a banana leaf and crafted from recipes that have stood the test of time.

Space - The Burger Co @ Theppakulam - Madurai.

Space is a contemporary burger concept that marries precision-driven flavor development with modern QSR efficiency. This project was initiated by Mr.Ram Prakash and brought to life by Sridhar Iyer brand ambassador of Bliss Restaurant Consulting, who secured the concept and is leading the project management and go-to-market strategy. We are collaborating closely with Sathiyaseelan S from Griffith Foods to craft a menu that blends culinary creativity with scalable raw-material solutions.

What to expect

- A menu built on robust formulations and premium ingredient systems from Griffith Foods for flavor stability and streamlined prep.

- Operational-ready SOPs and training modules for consistent performance across outlets.

- A curated in-store experience that balances contemporary aesthetics with high-turn QSR ergonomics.

A week well spent, traveling through the evolving patisserie landscapes of Bengaluru and Coimbatore 🍰✨

Our recent gastronomic tour across these two vibrant cities was nothing short of inspiring — made even more enriching by the perspectives each of us brought to the table. Alongside me were Ashwini Ruppa, a seasoned baker with a keen eye for technique and detail; Saran, bringing sharp business acumen and market understanding; and Ponrathan Aravind, whose experience as an industrial caterer added depth in scalability and operations.

In Bengaluru, we explored some of the finest names shaping the city’s dessert culture — Lavonne Academy Of Baking S.., Magnolia Bakery, Mad Over Donuts, Nothing Before Coffee, Amintiri, SMOOR Chocolates, Eleven Bakehouse, Glen’s Bakehouse Sarjapur, Theobroma, maison du brownie, Zed The Baker, Labonel Fine Baking, and Concu. Each space reflected a strong identity, whether through classic European techniques, modern reinterpretations, or bold flavor profiles.

Coimbatore, with its steadily growing dessert scene, surprised us with its finesse and attention to detail at THE BAKING SOCIETY undefined and Amoté Patisserie — proving that the city is fast catching up with refined patisserie trends.

What stood out most was the sheer diversity of products and techniques being executed with precision — from rich cheesecakes, fudgy brownies, and delicate tiramisu to perfectly balanced tres leches and indulgent opera cakes. The exploration extended into European classics like croissants, Danish, French entremets, macarons, and Berliners, alongside evolving favorites such as New York-style cookies, Korean buns, and bento cakes.

We also witnessed innovation beyond desserts — sourdough pizzas, calzone pockets, artisanal bruschetta, and elevated beverage pairings like hot chocolate and specialty gelatos — all contributing to a holistic café experience.
