Khaman Dhokala Recipe...

Hello Friends,
I have come up with very tasty and healthy snacks item recipe of Khaman Dhokala. It's a tried and tasted recipe and very easy and instant with very less ingredients.

Ingredients -
2 cup of gram flour or chickpea flour (besan flour)
3/4 spoon citric acid
1/4 cup icing sugar
Salt as per taste
1/2 tsp turmeric powder
Pinch of asafetida
1/4 cup cooking oil
1tsp cooking soda

For Tadka -
Oil
Mustard seeds
Finely chopped 2 chillis
Curry leaves
Coriander leaves finely chopped
1tsp Lemon juice
2 tsp suger

For chutney -
1 cup of coriander leaves
1/4 cup mint leaves
3-4 cloves of garlic
Small piece of ginger
2 tsp curd
Salt as per taste
Sugar as per taste

Method -
First we keep our cooker ready to steam dhokala. Add water in cooker and keep stand and close the lid without whistle.
Let boil the water in cooker.
Grease tin for steam the dhokala.
In a vessel mix citric acid, sugar, turmeric, asafetida and salt with one cup of water. Dissolve everything together.
Next add oil in a mixture and mix together.
Now add gram flour and to adjust the consistency add water as per requirement. Better should not too much thick nor thin.
Rest the better for 15 minutes.
After 15 minutes add 1tsp of baking soda and 2tsp of water and mix the batter quickly.
And pour it to oil greased tin.
Put that tin in cooker and close the lid without whistle.
And steam dhokala for 15 min.
After 15 min check dhokla with knife. If knife come out clean that means our dhokala has cooked. Other wise u can steam for next 5 minutes.
After removing dhokala leave to cool.
For tempering, take oil in vessel the add mustered seeds, cut chillies, curry leaves let it cracked properly.
Then add water, sugar and lemon juice and boiled together.
Once dhokala cool down cut it into pieces and add tempering on dhokala.
Also add chopped coriander and serve it with green chutney.

Green chutney -
Take coriander leaves, mint leaves, garlic cloves, ginger, cumin seeds, curd, sugar and salt in mixture jar and grind it to fine past and adjust the consistency with water.
