Cacao Vs Cocoa

Cacao refers to cacao beans that have not been roasted, what is called cocoa is made of beans have been roasted. So, in turn, a product that is labeled cacao is the raw bean and is often packaged as vegan chocolate that has been minimally processed with no additives.

Eg. Cacao Beans, Cacao Nibs

Cocoa, on the other hand, is a processed chocolate product after roasting cacao beans, grinding and melanging.

On Product Label, ingredients are listed as per the order of dominance. i.e highly used ingredient first, then in descending order.

So, how to differentiate between all ?

Couvature has Cocoa Solids/Butter as first ingredient.

Chocolate has Sugar first followed by Cocoa Solids/Butter.

Compound has Sugar followed by Vegetable Hydrogenated Fat.

***** In case, if you find Vegetable Hydrogenated Fat OR Palm Kernel Oil OR Edible Vegetable Fat listed as FIRST ingredient, then Please avoid purchasing it. It contains very HIGH amount of TRANS FATS !!! 🙏🙏🙏🙏🙏🙏

Fat Blooms are white spots visible on chocolate surface. It happens because of Cocoa Butter looses it's type five beta crystals. This disturbance in crystalline structure can be caused by temperature changes when melted chocolate (which lost its temper) is put inside fridge.

Due to fat bloom, chocolate doesn't look good & looses it's snap, but it DOESN'T affect it's NUTRITION contents.

If you want to recover the chocolate again, then try retempering it..!!
