Cantina siciliana che produce vini biologici tra i sinuosi colli della Valle del Dirillo.

Nella nostra tenuta, i suoli cambiano molto anche a poca distanza tra loro.

Questa è la Terra Bianca, una piccola zona dell’altopiano, a 250 mt sul livello del mare. E’ un terreno calcareo e molto povero che dona al vino eleganza e concentrazione.

Queste caratteristiche uniche ospitano 3 varietà contemporaneamente: Vermentino, Chardonnay e Moscato.

Dalla vendemmia 2025 abbiamo deciso di vinificarle insieme e di restituire in Thymbra quello che soprattutto il terreno dà a questo vino: eleganza e mediterraneità.

Ogni varietà riesce ad esprimersi singolarmente, ma è il terreno che determina il carattere del vino.

On our estate, the soil varies greatly even over short distances.

This is Terra Bianca, a small area of the plateau, 250 meters above sea level. It is a calcareous, very poor soil that imparts elegance and concentration to the wine.

These unique characteristics are home to three varieties grown together: Vermentino, Chardonnay, and Moscato.

Starting with the 2025 harvest, we decided to vinify them together and to reflect in Thymbra what the soil above all gives to this wine: elegance and a Mediterranean character.

Each variety expresses itself individually, but it is the soil that determines the wine’s character.

Bisogna ve**re fin qui per sentirla davvero: prima nella vigna, poi nel calice.

L’acqua in Sicilia non si spreca mai.

Per questo a Valle dell’Acate l'irrigazione non è un automatismo, ma un atto di ascolto.
Non decidiamo noi quando aprire l'acqua, ce lo dicono le piante.

Grazie a una collaborazione con il CSFNSM - Centro Siciliano di Fisica Nucleare e Struttura della Materia, nei nostri vigneti abbiamo installato sensori che monitorano costantemente lo stato delle piante.

Quando la pianta ne ha davvero bisogno, interveniamo con irrigazioni di soccorso mirate, dando solo quello che serve davvero.

È il nostro modo di lavorare: usare la tecnologia, ma senza forzare la natura, rispettando l’equilibrio del vigneto e l’acqua che abbiamo.

That’s why, at Valle dell’Acate, irrigation isn’t an automatic process—it’s an act of listening.
We don’t decide when to turn on the water; the plants tell us.

Thanks to a partnership with the Sicilian Center for Nuclear Physics, we’ve installed sensors in our vineyards that constantly monitor the plants’ condition.

When the plant truly needs it, we intervene with targeted emergency irrigation, providing only what is truly necessary.

This is how we work: using technology, but without forcing nature, respecting the balance of the vineyard and the water we have.

In una terra così generosa di sole, viene spontaneo immaginare vini caldi e intensi.
A Vittoria, però, il carattere del vino prende un’altra direzione.

Crescendo tra questi filari, ho capito che qui la freschezza non è una scelta di stile, ma il risultato di un territorio che parla con precisione: i suoli, la ventilazione costante e l’influenza dell’altopiano contribuiscono a definire il ritmo di ogni vendemmia.

Non cerchiamo di imporre un’identità al vino: scegliamo di interpretarla con rispetto.

In a land so bountiful in sunshine, it’s natural to imagine warm, intense wines.
In Vittoria, however, the character of the wine takes a different turn.

Growing up among these vineyards, I realized that here, freshness is not a stylistic choice, but the result of a terroir that speaks with precision: the soils, the constant breeze, and the influence of the plateau all help define the rhythm of each harvest.

We do not seek to impose an identity on the wine; we choose to interpret it with respect.

Maggio solitamente è un mese in cui la vigna cresce tanto e le piante sono piene di energia.

In questi giorni passiamo ore tra i filari per la gestione della chioma.
Un lavoro di precisione che serve a regolare lo sviluppo vegetativo, mantenere l’equilibrio della pianta e accompagnare una maturazione ottimale dei grappoli.

Non cerchiamo la quantità, ma l'equilibrio. Solo così otteniamo uve sane e vini di grande bevibilità, nati da quella cura costante che per noi è la forma più autentica di armonia con la nostra terra.

May is usually a month when the vineyard grows rapidly and the vines are full of energy.

These days, we spend hours walking among the rows to manage the foliage.
It’s precision work designed to regulate vegetative growth, maintain the vine’s balance, and ensure optimal ripening of the grapes.

We do not seek quantity, but balance. Only in this way do we obtain healthy grapes and highly drinkable wines, born from that constant care which, for us, is the most authentic form of harmony with our land.

Nella nostra tenuta, i suoli cambiano molto anche a poca distanza tra loro.

Questa è la 𝐓𝐞𝐫𝐫𝐚 𝐆𝐢𝐚𝐥𝐥𝐚.
Si trova sulla costa e ha un terreno dalla struttura sabbioso-argillosa e dal caratteristico colore chiaro.
Qui, la ventilazione e la vicinanza al mare permettono alla vite di maturare lentamente, mantenendo freschezza ed espressività aromatica.

Da questa terra nasce Zagra, il Grillo di Valle dell’Acate. Un bianco fresco, sapido e minerale, con una grande persistenza.

It is located on the coast and has a sandy-clay soil structure with a characteristic light color.
Here, the breeze and proximity to the sea allow the grapes to ripen slowly, maintaining freshness and aromatic expressiveness.

Siamo nel cuore del territorio di Vittoria, tra le contrade di Biddini Soprana e Sottana. Qui le condizioni climatiche sono perfette per crescere il Frappato

Grazie a questo, l'unica cosa che facciamo in cantina è accompagnare il vino lasciando che sia il territorio a parlare.

Usiamo l’acciaio per preservare la purezza del frutto, la sua fragranza e l'esplosività dei suoi sentori.

La direzione resta sempre la stessa: non aggiungere, non forzare, cercando di interve**re il meno possibile.

We are in the heart of the Vittoria area, between the contrade of Biddini Soprana and Biddini Sottana. Here, the climatic conditions are ideal for growing Frappato.

For this reason, the only thing we do in the cellar is guide the wine, allowing the territory itself to speak.

We use stainless steel to preserve the purity of the fruit, its fragrance, and the vibrancy of its aromas.

The direction remains the same: add nothing, force nothing, and intervene as little as possible.

Spesso mi viene chiesto cosa significhi dare continuità a una storia iniziata nel 1870.

Essere la sesta generazione di una famiglia di vignaioli credo sia soprattutto una questione di responsabilità. Quello che faccio non riguarda solo me o il mio presente, ma qualcosa che è iniziato molto prima e che chiede di essere protetto.

Quindi, in vigna come in cantina, mi muovo con rispetto, attenta ai tempi della natura.
Non è sempre la strada più facile, ma è quella che sento giusta.

Non seguo una moda. Preferisco restare fedele a ciò che sono e a chi sceglie i miei vini per come li produciamo.

Per me la continuità è questo: innovare senza perdere identità.

I’m often asked what it means to carry forward a story that began in 1870.

Being the sixth generation of a family of winemakers is, above all, a matter of responsibility. What I do is not only about me or my present, but about something that started long before and asks to be protected.

So, in the vineyard as in the cellar, I move with respect, attentive to the rhythms of nature.
It isn’t always the easiest path, but it’s the one that feels right to me.

I don’t follow trends. I prefer to stay true to who I am, and to those who choose my wines for the way we make them.

For me, continuity means this: to innovate without losing identity.
