In questi giorni stiamo facendo la svinatura del nostro Cabernet Sauvignon. 🍷✨

Dopo giorni di lenta macerazione, dove le bucce hanno ceduto colore, struttura e profumi al vino, è arrivato il momento di separare il liquido dalla parte solida.

La svinatura è un rito profondo e affascinante: il vino "nuovo" svela finalmente la sua personalità. Ora il viaggio continua nelle botti, dove riposerà e affinerà il suo carattere. 🪵🍇

These days in our cellar, we are performing the svinatura (devatting) of our Cabernet Sauvignon. 🍷✨

After days of slow maceration-where the grape skins have given their rich color, structure, and aromas to the w**e-it’s time to separate the liquid from the solids.

Svinatura is a deep and fascinating w**emaking ritual: the "new" w**e finally reveals its true personality. Now, the journey continues in the wooden barrels, where it will rest and refine its character. 🪵🍇
