Meet our main helper - Ettore 🐶 For 7 years he helps us to find the most aromatic mushrooms🐕

🐾Truffle hunting with dogs, it's not only a very fun thing to do, but it's also good for the environment☝️

Unripe truffles are odorless and therefore of little culinary value. The attraction of dogs makes it possible to find only ripe truffles with their amazing aroma🥰

Dogs accurately locate ripe mushrooms, and thus the fragile topsoil is less disturbed during picking and young truffles are not affected🌱 Dogs have amazing olfactory abilities that are far superior to humans, and most dogs enjoy these peculiar scent games.

QUALITY ASSURANCE👌🏻

We carefully inspect each mushroom before we send the order to the customer🕵🏻♂️

Delivery is made under strict temperature control 🌡 This is important ☝️ to preserve the unique truffle flavor.

Upon receipt of the order our customers inspect the entire batch of goods and if any mushrooms do not suit them, we make a replacement! But such cases are very rare 😉

BLACK TRUFFLE PASTA😋

Save this quick and easy recipe🔖
⠀
Ingredients:
* Spaghetti - 300 gr.
* 1 small black truffle TUBER AESTIVUM VITTAD
* Extra virgin olive oil - 60 ml
* Pecorino Romano cheese - 100 gr
⠀
⏰Cooking time - 20 minutes
⠀
✔️Cut the cheese on a grater. Hard cheese is better for this recipe, more salty and ripe.
⠀
✔️ Grate the truffle into thin slices.
⠀
✔️Cook the spaghetti until al dente.
⠀
✔️Pour off a ladleful of broth before draining.
⠀
✔️Drain the water and immediately add half of the grated cheese and olive oil, add a little broth to give the right consistency of sauce and to prevent the spaghetti from sticking together. Mix well.
⠀
✔️Serve with a sprinkle of thinly sliced truffles and the remaining cheese on top.

HOW MUCH IS A TRUFFLE WORTH?

The price of truffle is like the price of a stock on the stock market😃 and depends on many factors:
⠀
✔️Truffle variety - our company sources 7 different varieties of truffle, which allows us to provide restaurants with this delicacy year-round.
⠀
✔️The region in which it grows. We harvest our truffles in two regions of Italy: Umbria and Piemonte.
⠀
✔️The weather conditions. Sometimes because of long droughts the harvest is much smaller and the value of each mushroom increases.
⠀
✔️The size and weight of the mushroom. We apply this classification to our truffles:
▪️First class 20 - 250 gr.
▪️Second class 10 - 20 gr
▪️Round 10 - 30 gr
