la zona di spumantizzazione e la cantina storica

There’s an hour, just past sunrise, when the light still carries the hush of the night before it. The vines have already done the beautiful work. Ours, at Tenuta del Buonamico, is simply to arrive at precisely the right moment, and no other.

C’è un’ora, appena dopo l’alba, in cui la luce porta ancora con sé il silenzio della notte precedente. La vite ha già compiuto il lavoro più bello. Il nostro, alla Tenuta del Buonamico, è semplicemente arrivare al momento esatto, e non un altro.

Some things get better with technology. Some things stay exactly as they are. Some grapes still need hands. That’s raccolta a mano.
We’ve spent years bringing new tools into this vineyard, better ways to work the land, better ways to protect it. And still, every year, there is this: someone walking the rows, cutting by feel, smiling like it’s the first year all over again.
That’s the part of this place that doesn’t change. That’s the part we’d never want to change.

Alcune cose migliorano con la tecnologia. Altre restano esattamente come sono. Certe uve hanno ancora bisogno di mani. Questa è la raccolta a mano.
Abbiamo passato anni a introdurre nuovi strumenti in vigna, modi migliori di lavorare la terra e di proteggerla. Eppure, ogni anno, c’è ancora questo: qualcuno che cammina tra i filari, taglia a sentimento, sorride come se fosse di nuovo il primo anno.
Questa è la parte di questo posto che non cambia. Ed è la parte che non vorremmo mai cambiare.
