Bubbles are the ultimate sign of a well-prepared cup of cacao 🫧
Pure cacao contains all its natural cacao butter and, because fat and water naturally separate, you must blend vigorously to force them together.
The appearance of stable bubbles means you have achieved a successful emulsion!
To keep it simple, the tiny droplets of cacao butter are suspended evenly throughout the water, which locks in air bubbles and gives this ancestral beverage its signature velvety texture. If it isn't blended well, the fat will just separate and float to the top, looking more oily than frothy.
FUN FACT: in ancient Mesoamerica serving a cup of cacao without bubbles would have been seen as disrespectful or poorly made because the foam was literally considered the "soul" of the beverage (from a Zapotec perspective) ☕️
