Consistency!

Nothing can ruin the guest experience as much as a spoiled or off-tasting signature dish. If a dish isn't up to s***f, or you run out (sell out), the quality of the guest experience takes an immediate nosedive.

We all know mistakes can happen, but if we want guests to return, inconsistent, bad or mediocre food, or running out of someone’s favorite dish, must be extremely rare.

The best restaurants have systems in place to prevent these mishaps. Pre-shift line checks, order guides and daily prep lists are among the fundamental kitchen management systems used to ensure fresh, consistent food.

Line checks provide an opportunity to double-check freshness and order guides help to keep enough raw product on hand, but the daily prep list is the KEY to controlling freshness and consistency.

With many restaurants preparing everything from scratch, having enough properly prepared batch recipes for the shift is crucial since many recipes take too long to prep on the fly. Having too much prepared product can result in waste or lesser quality. Not enough and you risk having to 86 a menu item and disappoint guests.

Used properly, a well-constructed Daily Prep Checklist can reduce these risks. It should include essential information such as the shelf life of a recipe and par levels showing the minimum amount of product needed to meet the business demand for a single day.

It should also allow for fluctuation in the par levels. For many restaurants, par levels need to be higher for weekend days than they are for most weekdays.

Knowing the shelf life of a product helps in creating a proper rotation and date labeling system to ensure freshness.
