Creamy Vegan Green Chile Casserole

INGREDIENTS 🧾⁠

1 (16-oz.) package super firm tofu, drained and grated
2 Tbsp olive or avocado oil
1/2 medium yellow onion, finely chopped (1/2 onion yields ~1 ½ cups or 160 g)
1 small red bell pepper, finely chopped (1 pepper yields ~1 cup or 150 g)
1 (4-oz.) can diced green chiles (hot or medium)
1 tsp sea salt
1 Tbsp chili powder blend
6 (6-inch) corn tortillas, cut in half to make 12 half-moons
2 batches Creamy Cashew Jalapeño Sauce



INSTRUCTIONS 👩🏻‍🍳⁠

1. Start by soaking the cashews for the Creamy Cashew Jalapeño Sauce (as recipe is written, ~1 ½ cups or 210 g cashews — adjust as needed if altering batch size) in boiling water, and set aside.

2. Heat the oil in a large rimmed skillet over medium-high heat. Once hot, add the onion, bell pepper, and green chiles and cook for 3-5 minutes, until translucent, fragrant, and beginning to soften. Add the shredded tofu along with the salt and chili powder and toss until evenly combined. Taste and adjust, adding more chili powder for smokiness, green chiles for spice, or more salt to taste. Remove from heat and set aside.

3. Prepare the Creamy Cashew Jalapeño Sauce next. Then it’s assembly time!

4. Lightly oil an 8×8-inch glass or ceramic baking dish, then add 1/4 cup (60 ml) of the sauce to the bottom of the dish and spread evenly. Place 4 corn tortilla halves on top of the sauce, then put half of the filling mixture on top of the tortillas and spread evenly. Top the filling with 3/4 cup (180 ml) sauce and 4 more tortilla halves, then repeat: the rest of the filling, 3/4 cup (180 ml) sauce, and the remaining 4 tortilla halves. Pour the remaining sauce over the top, then cover with foil.

5. Bake for 20 minutes, until the casserole is warmed through and the sauce has thickened. Let cool for 5-10 minutes, then serve! It's delicious topped with cilantro, hot sauce, and pickled onions (all optional). Leftovers keep in a sealed container in the refrigerator for up to 2-3 days or in the freezer for up to 1 month.

Creamy Vegan White Bean Queso

INGREDIENTS 🧾⁠
1 small jalapeño (if sensitive to heat, use half)
2 medium cloves garlic, left whole
~1 tsp olive or avocado oil (to coat jalapeño and garlic)
1 (15 oz.) can cannellini beans (NOT drained)
1/4 cup nutritional yeast
1/4 tsp smoked paprika
1/8 tsp ground cumin
1/2 tsp sea salt
1/4 cup raw cashew butter* (we like Artisana)


INSTRUCTIONS 👩🏻‍🍳⁠
1. Preheat your oven to 450 degrees F (232 C) and set out a baking sheet.
2. Place the jalapeño on the baking sheet and lightly coat with olive oil. Place the garlic cloves in a small piece of foil (or parchment paper) and lightly coat with more olive oil. Close your foil pouch and place on the baking sheet with the jalapeño. Roast for 15 minutes until blistered.
3. Meanwhile, to a small saucepan, add the beans, including the liquid from the can. Bring to a boil, then reduce to a simmer, cooking for 4-5 minutes. Reserve 1/4 cup of the cooking liquid from the pot and then drain what’s left.
4. To a food processor (or high-speed blender, but you may need water to encourage blending) add the drained beans, cooking liquid, nutritional yeast, smoked paprika, cumin, sea salt, and cashew butter.
5. Once the jalapeño and garlic are done roasting and cool enough to handle, carefully remove any seeds/stems from the jalapeño and skin from the garlic. Place the jalapeño and garlic cloves into the food processor. (Note: Be sure to wash your hands after peeling to avoid getting any lingering heat on your skin or in your eyes.)
6. Process the dip on high until smooth and creamy. Taste and adjust flavor to your preference, adding salt for overall flavor, nutritional yeast for cheesiness, or smoked paprika for smokiness. If needed for blending, you can add a little water.
7. Serve warm with chips. Leftovers can be stored in an airtight container in the refrigerator for up to 4-5 days. Reheat in the microwave or on the stovetop. Not freezer friendly.
