After 18 days in the fermenter it's time for the first sample of the Dzidzilche Dry at 12.5% ABV.
Strong honey on the nose. Medium bodied. Caramel, citrus and floral tones on the tongue. Still slightly carbonic. Astringent/bitter at the end.
Will check in on it again in three days and will likely stabilize, slightly back-sweeten to cut the bitterness and set aside for aging.
