Let's try Linzer Cookies today.

Ingredients
• 3/4 cups butter
• 1/2 cup sugar
• 1 egg
• 1/2 teaspoon lemon zest
• 1/4 teaspoon vanilla extract
• 1 1/2 cups finely ground blanched almonds or hazelnuts
• 2 1/4 cups cake flour
• 1/2 teaspoon baking powder
• 6 ounces raspberry jam, or other red preserve (quince jelly)
• Powdered sugar

Method
1. Beat the butter until fluffy. Add sugar and continue beating. Beat in the egg, lemon zest, and vanilla extract.
2. Whisk together the flour, ground nuts, baking powder, and cinnamon. Add to butter sugar egg mixture a third at a time, beat well after each addition.
3. Form the dough into disks, wrap with plastic wrap and chill for 1 hour.
4. Roll the dough between two sheets of baking paper to 1/8-inch thickness. Put rolled dough (still between baking papers) in the freezer for 5-10 minutes to firm up before cutting.
5. Preheat oven to 350°F. Cut out the base cookie shapes. Cut out the centers of half the disks with a smaller cookie cutter shape. Re-roll scraps and repeat.
6. Bake for 12 minutes at 350°F or until edges turn golden. Cool on a wire rack.
7. Heat the jam or jelly and spread the solid disks with a layer of the hot preserves. Place the top layer cookie over the bottom, pressing down lightly.
8. Sprinkle with powdered sugar. Then fill the holes with more preserves. Let set slightly before serving.

Let Cook! Soya Chunk Gravy
Ingredient
• 1 cup Santha’s Soya Chunks
• ½ tsp cumin seeds
• A pinch of mustard
• Curry leaves / bay leaf
• 1 large or medium onion (finely chopped)
• 1 or 2 green/red chilli slit
• 1 ½ tsp ginger and garlic paste or finely chopped
• 1 tsp Santha’s chili powder
• ½ tsp Santha’s Garam Masala
• 1 tsp Santha’s meat or fish masala
• 1 tsp Santha’s Coriander powder
• 2 tbsp Coriander leaves
• 2 Large tomato & 10 cashews (paste)
Method
 Heat oil in pan. Add mustard and cumin seeds – splutter add in curry leaves, onion and green chilli
 Aromatic and turn golden
 Add ginger and garlic paste in low flame
 Add tomato and cashew nut paste sauté till it thickens
 Add Santha’s Chili Powder,Garam masala,coriander powder and salt
 Sauté everthing well until aromatic for 3 -4 minutes
 Now add on soak and well clean soya chunks, sauté them until the soya chunk coated well in the masala.
Pour 1 ¼ cup water and mix well,cover to boil & simmer. If the curry is too tick you may add some more water for the gravy
 Cook on low flame till the soya chunks cooked well.The oil begins to float on top when the curry is done. Add coriander leaves and mix, turn of the heat and rest for while until the soya chunk soak up the flavours.
 Serve with chapati or tosa.

Only a handful of old-timers may remember this, but the late Mr.Vallison Raman, son of rubber tapper today a spice king of Malaysia’s Negeri Sembilan's state, was originally a teacher.

In his spare time, Mr.Vallison used his car to help a spice maker friend deliver his products from door to door. He developed an avid interest in the trade, and when his friend decided to sell the business, he jumped at the opportunity.

With a capital of less than USD13 (RM50), he bought a grinder and rented a shop-lot in the rural township of Rantau, supplying custom spice blends to shopkeepers and coffee shops. His humble spice mill performed another important service for the neighbourhood: Every morning, housewives queued up with bags of chillies, and grains, waiting their turns to grind spice powders for their kitchens.

As his business grew from strength to strength, Vallison upgraded to a Morris Minor, a Volkswagen and eventually a Mercedes-Benz van. In addition to preorders, those vehicles doubled as mobile grocery stores for ad hoc purchases while making deliveries.

In 1979, Mr.Vallison made the strategic decision to buy a plot of undeveloped rubber land in Seremban, Negeri Sembilan’s capital. Today, this is the site of the company, and their family home.

From their signature Meat Curry Powder, Fish Curry Powder and Chilli Powder, SANTHA’S (for short) has diversified into one of Malaysia’s largest spice powder mills, with over 100's food products including lentils, dry fruits and nuts, whole-grain stone-ground flours and speciality foods like vegetarian meats. Other than supplying to supermarkets and provision shops, Santha’s exports to an international market that includes the U.S., Japan, Taiwan and Singapore.

Santha produces a number of spices for the local market. The success is at least partially due to the founder’s branding savvy: Mr.Vallison introduced the more hygienic aluminium foil packaging at a time when its competitors were still using plastic versions. The current look has evolved to include a distinctive Santha's crow brand authentic recipe, making the products instantly recognisable which resulted in Santha’s becoming the only Malaysian company among 143 countries to receive a World Quality Commitment Award in 1999.

The factory is a curious mix of the old and modern. Massive chiller rooms preserve the freshness of raw ingredients imported from around the world. State-of-the-art machines perform an assortment of tasks such as roasting, mixing, crushing, grinding, sifting, cooling and packaging. Staff in blue caps and industrial coats go about their daily tasks following detailed operating manuals.

An Volkswagen van used to transport spices in the early days. Yet amidst those modern conditions, you’ll find pockets that show the importance of revered traditions in the company culture. Long-serving staff can measure out ingredients with accuracies that match weighing machines. Some key products such as Kurma Powder, Garam Masala, Gram Dhall Flour, Muruku Flour are produced using old-school grinders from the company’s early days. The heat release process helps retain the texture, natural oils and aromas of these ingredients, compared to the pulverising process of industrial super micro grinders.

Indian spices not only add tonnes of flavor, but are very versatile.

Santha’s is all about going on a journey with our customers and exploring new and exciting ways of using traditional spices and believe that maintaining a balance between beloved traditions and modern ways is the key to SANTHA'S longevity.

And today, the company runs by Mr.Vallison's son in law, Dr.TVK Balakrishnan, son Mr.Chandra Mohan, and their 3rd generation grandson Mr.Muhandran
