“Extra hot, please.” — one of the most common requests we get behind the bar.
And we totally get it. You want a drink that stays warm. But here’s the thing — when milk goes above 70°C, the proteins break down, the natural sweetness disappears, and your espresso flavour gets completely lost in the heat.
The sweet spot is 55°C–65°C. That’s where milk is at its creamiest, sweetest, and most stable. It’s not just our preference — it’s science.
We steam with that in mind, every single cup.
