The vanilla curing is a complex, 3 to 6-month process depending on the spp.
This is a process to transforms unripe, green pods into dark, fragrant vanilla beans.
Freshly harvested green vanilla pods have no aroma or flavor. The signature vanilla flavor and dark color are only developed through a careful 4 - step traditional process that takes up to 3 to 6 months, although some species are much shorter.
After 5 years of experimentation, we have likely moved past beginner hurdles.
We continue to refine these process to prevent common failures like mold, splitting, or flat flavores etc…which were once, part of our journey !!…now things of the past.
