BRIOCHE ROLLS

Ingredients:

For the mass:
320 ml milk
1 egg
100 g butter (melted)
110g sugar
7 g dry yeast
620 g flour
Salt
260g sugar
110g butter
Milk
grated coconut

Indications:

1. In a bowl add milk, egg, butter (melted), sugar and dry yeast and beat. Add the salt little by little, add the flour and mix it with the wooden spoon. When the dough begins to form, knead it with your hands to obtain a soft dough. Cover with plastic wrap and let sit for 2 hours, or until doubled in volume.

2. Meanwhile, add the butter and sugar to the bowl and mix with a spatula to combine.

3. Once the time has elapsed, remove the gas from the dough and transfer it to the work surface.

4. Cut the dough in half and roll out each half into a rectangular shape. Spread the butter/sugar on top evenly and spread it out. Cut it into pieces/rolls (6 pieces each half).

5. Transfer the rolls to the parchment paper-lined baking sheet and cover with a cloth. Let them rest for 45 minutes, or until they double in volume.

6. After 45 minutes, transfer the rolls to the oven and bake at 180°C/360°F for 30 minutes.

7. Pour the milk into the buns after baking and sprinkle with grated coconut. Serve them on the serving platter and enjoy.

BITTER LEAF SOUP (OFE ONUGBU)

Bitter leaf soup or ofe onugbu is another popular Nigerian soup made with bitter leaves and cocoyam paste.

Ofe onugnu, a special soups identified to be from the Eastern part of Nigeria is similar to the Camerounian Ndole.

Ingredients
👉Ogiri
👉Panla (Dry cord)
👉Habanero pepper
👉Cocoyam pieces
👉Seasoning cubes
👉Assorted meat (Intestines, ponmo, cow tail, etc)
👉Ground crayfish
👉Palm oil
👉Bitter leaves
👉Salt to taste
👉Dried fish
👉Smoked Fish

METHODS

1. Bring the Bitter leave to boil for about 10 minutes.
Remember, bitter leaf as the name implies is very bitter so you will need to get rid of the bitterness.
You will need to wash severally with fresh clean water until you can no longer taste the bitterness. You may add some salt to wash the leaves.

2. Boil assorted beef with salt and seasoning. Leave your stock with the meat.

3. Bring cocoyam to boil with skin on till tender. Peel skin off cocoyam and pound till you get a smooth paste.

4. Place a pot of cooked assorted meat back on heat; bring to boil for about 3-4 minutes on medium heat. Add some water to the meat if needed to achieve the desired thickness of how you want the soup to be.

5. Add smoked fish, dried fish, dried cord, habanero pepper, palm oil and crayfish.

6.Add ogiri (the most important part of this dish, you can’t substitute it with any other thing.

7. Add salt to taste. Continue cooking till ogiri dissolves in the soup and you should also be able to taste it.

9. Add pounded cocoyam paste in bits to the soup, and don’t stir just yet. Cover the pot with a lid and allow the cocoyam to dissolve in the soup.
Once this is achieved, stir together and check for salt and seasoning

8. Add the washed bitter leaf to the soup, stir till well combined. Reduce the heat and allow soup to simmer for 4 minutes

9. Serve Bitter leaf soup with swallow of choice. Enjoy 😝😝😝😝

PANCAKES

👉Ingredients

2½ cups of plain flour
3 medium eggs
1/2 cup oil
1 cup (250 ml) of water/ milk
¼ teaspoon of salt
1/4 cup sugar ( to taste)
Ground Chilli Pepper (to taste)
Vegetable oil for frying

👌Before you fry the pancake
Put the margarine is a small bowl and melt in the microwave. You can also place the bowl in a bigger bowl of hot water to melt the margarine.

👌Break the eggs and separates the yolk from white egg.
Add the yolk into the oil, sugar and beat till smooth.

👌Add half flour, salt pepper, baking powder and mix well till there are minimal lumps.

👌Add the remaining half flour, stir well.

Note if the batter is too thick you can add more milk or water 1/2 to it

PANCAKE BATTER

👉Blend the mix using a liquid blender. This will give the pancake batter the smoothest consistency. If you don't want to blend it, no problem, just mix the ingredients very well so that the lumps are minimal.

👉Note: You can also add onions to the pancake but make sure that your blender can liquefy the onions. If not, the pieces of onions will not let you achieve very thin pancakes.
Directions

Set a frying pan over medium heat. Add a few drops of vegetable oil. Just enough to lubricate the frying pan.

When hot, pour some pancake batter into the frying pan. Tilt the pan so that the batter coats the surface of the pan. (This should be a very thin coat)

Fry the underside of the pancake for approximately 1 minute, shaking the pan from time to time till the pancake comes loose. You can also loosen it with the spatula. Check the underside to be sure it has browned to your liking, preferably light brown.
Flip the pancake so you can fry the top side as well.
The pancake is done when both sides are light brown.
For breakfast, serve with Custard, Akamu (Ogi) or Oat Meal. If you just want to snack on the pancake, make sure you have a drink chilling in the freezer before you even start mixing the batter.thanks

YUMMY AND DELICIOUS MEAT PIE RECIPE:

👉For the meat Pie dough You need

(1): 1kg (8 cups) plain flour

(2): 2 teaspoons baking powder(optional)

(3): 500g (1.1 lbs) Margarine

(4): 2 pinches salt

(5): ½ cup / 125 ml / 4.2 oz water

(6): 1egg(optional) if u use egg u need to reduce water

👉For the meat Pie filling u need:

(1): 2 medium Irish potatoes

(2): 2 medium carrots

(3): 500g (1.1 lbs) minced meat

(4): 1 medium onion

(5): 2 cooking spoons vegetable oil

(6): 2 Knorr cubes or any seasoning

(7): 1 teaspoon thyme

(8): 2 tablespoons plain flour

(9): 1 cup / 250 ml / 8.4 oz cold water

(10): Salt to taste


METHODS FOR THE FILLINGS

(1): Peel the Irish potatoes and scrape the carrots, wash and cut these two into tiny cubes.
Wash and slice the onions into tiny pieces.

(2): With your cooker or stove set to medium heat, heat the vegetable oil in a pot, add the diced onions and stir for a bit, add the minced meat and stir vigorously till the minced meat turns pale.

(3): Add 1 cup of water, Knorr cubes and thyme. Cover the pot and once the contents of the pot starts boiling, add the diced carrots and potatoes and cook till everything is well done.

(4): Dissolve 2 tablespoons of plain flour in half cup of cold water and add to the meat pie filling. This tip is so that the meat pie filling does not dry up during baking. It is also what keeps the meat pie filling moist.

(5): Add salt to taste, stir the contents and turn off the heat. Set the meat pie filling aside. Now is the time to prepare the dough for the meat pie.

METHODS FOR DOUGH MAKING

(i): Put the 1 kg of flour in a sizeable bowl; add 2 teaspoons of baking powder and 2 pinches of salt. You really do not need a lot of salt for the meat pie dough. The meat pie will get most of its taste from the filling. Mix these dry ingredients very well.

(ii): Use a tablespoon to scoop the margarine in small bits into the bowl of flour. The smaller you make the bits of margarine, the easier it will be for you to rub them into the flour.

(iii): Use finger tips to rub the margarine into the flour till the mix becomes like crumbs.

(iv): Now, start adding cold water in bits while at the same time folding the mix till a stiff ball of dough is formed. You will be surprised at how small quantity of water you need to get the dough stiff. At most, all you need for the 1 kg of flour is half a cup of water.

(v): Knead the dough very well, put back in the bowl and leave to rest for 5 to 7 minutes. This makes the dough more elastic

Cut, Fill, Fold and Close procedure

(1): Set your oven and leave to preheat while you continue with the meat pie.

(2): Rub margarine or vegetable oil insides of the oven tray and set aside. This is so that the undersides of the meat pies do not burn or stick to the tray during baking.

(3): Break the egg, beat it and set aside, you will need it pretty soon.
Knead the dough some more, roll it out to achieve a 5mm thickness.

(4): Use a cutter, be it the cover of a small pot or a meat pie cutter, to make round cuts on the rolled out dough.

(5): Remove the excess dough, leaving behind the round cuts.

(6): Scoop some meat pie filling into the center of the round cuts, the quantity should be such that you can comfortably close the dough without overflows. Don't worry if you over-filled the first one, you have many meat pies to fill so at some point you will know just the right quantity of meat pie filling to scoop into the dough.

(7): Rub the egg on the inside edge of the cut meatpie dough. This is to ensure that your meat pie is perfectly sealed and does not open up while it is being baked.

(8): Fold one part of the dough to meet the other end and use a fork to press the 2 edges together to close tightly. Place your work of art in the oven tray and repeat the previous step till all the cut out dough is exhausted.

(9): Roll out more dough, cut, fill, close and place in the greased oven tray till all the dough is used.

(10): Rub the egg on the meat pies. This gives the meat pie a golden brown look when done.

(11): Set the tray in the preheated oven and bake for 30 to 40 minutes. This time will depend on the type and heating capacity of your oven. For some ovens, the meat pie will be done in half an hour, for some, it may take up to 50 mins. Whatever type of oven you have, the important thing to know is that the best meat peas are the ones baked at medium heat. You can confirm that the meat pie is done when it starts browning. It is alright to open the oven to check this.

Carrot Cake
2 cups All Purpose Flour
1 cup white sugar
1/2 cup brown sugar
3/4 cup vegetable oil
2 cups finely grated carrots
2 large eggs
1/2 cup buttermilk
2 tsp baking powder
1/2 tsp bicarbonate of soda
2 tsp vanilla
1 tsp ginger powder
2 tsp cinnamon
1/2 tsp nutmeg
1/2 tsp salt
1/2 cup raisins (optional)
3/4 cup chopped walnuts

Instructions
Preheat the oven to 170 Degrees Celsius.

1. In a large bowl add oil ,white and brown sugar . Beat until light .

2. Mix in the eggs one at a time .Add buttermilk and vanilla then mix well .

3. Sift in flour , baking powder, bicarbonate of soda , salt , cinnamon, nutmeg and ginger . Then gently mix .

4. Add the grated carrots, walnuts and raisins . Gently mix.

5. Line 2 baking pans with parchment paper. Divide the batter (mixture) equally in 2 baking pans .

6. Bake in a preheated oven for 30-35 minutes minutes or until well baked . Note: Baking time depends on your oven .

Let the cakes cool off completely before taking them out of the baking pan.

A relative of ginger, this vivid yellow-orange spice is common in Indian, Southeast Asian, and Middle Eastern cooking. It's also been used as medicine in places like India for centuries to treat issues such as breathing problems. Lately, turmeric has been touted as a super food that can fight cancer, ease depression, and more. Find out what turmeric can -- and can't -- do for your health.

👌Depression

Several compounds in turmeric may support your health. The most well-known of these is curcumin. Scientists are excited about curcumin's potential to ease depression and help antidepressants work better. But so far, research results have been mixed.

👌Type 2 Diabetes

Because curcumin can help fight inflammation and keep blood sugar levels steady, it could be a useful tool to prevent or treat type 2 diabetes. One study followed 240 adults with prediabetes and found that taking a curcumin supplement over 9 months lowered their odds of developing diabetes. Research is ongoing, but a lot of the studies so far have been on animals, not people.

👌Viral Infections

The next time you're under the weather, you may want to sip some turmeric tea. Curcumin might help you to fight off a variety of viruses, including herpes and the flu. (But most of the research on this was done in a lab, not on people.) Keep in mind that turmeric is only about 3% curcumin, and your body doesn't absorb curcumin well, so the occasional cup of tea won't be a cure-all.

Nsala soup.

Ingredients:
Live chicken
1 medium size smoked Fish
Dried Pepper ( Cameroun type preferable)
1 teaspoon Uziza seeds (ground)
2 pieces Uda (crushed)
1 tablespoon crayfish (ground)
Few slices Uziza leaves (as herb)
1-2 table spoons yam flour or 2 palm size flattened pounded yam (to thicken soup)
Water ( enough to serve 4 people’s soup)
Seasoning to taste
Salt to taste

Cooking directions:
-Wash, season, steam chicken with pepper and salt. -Add pieces of yam and cook; Take out when cooked and pound for the thickener.
-Wash fish, add to pot with the spices and crayfish when chicken is almost cooked. Check the seasoning and pepper at this point.
-Add more water to the the pot, bring to boil, add the pounded yam and cook till the soup thickens to the desired consistency

Note: If you are using yam flour, dissolve in cold water into a paste and stir quickly into the soup water; Stir well to prevent the paste forming a big lump in the pot. Then leave to boil until the soup thickens.

-Lastly add the sliced Uziza leaves. Cook for 2-3 minutes and soup is ready.
-Serve...😊
