One of the most fascinating facts about honey is that it never spoils.

Archaeologists digging in Egyptian tombs have actually found pots of honey that are thousands of years old—and it's still perfectly edible!

Why doesn't it go bad?

Honey is a "perfect storm" of chemistry that prevents bacteria and other microorganisms from growing:

Ultra-low moisture: Honey is mostly sugar with very little water. In fact, it's so dry that it draws water out of any bacteria that try to grow in it, essentially smothering them.

High acidity: Honey has a pH level between roughly 3.2 and 4.5. This acidic environment is highly unwelcoming to bacteria.

Natural hydrogen peroxide: When bees make honey, an enzyme in their stomachs (glucose oxidase) mixes with the nectar. This breaks down into hydrogen peroxide, which acts as a built-in antibacterial shield.

Note: If your honey gets cloudy or solidifies over time, don't throw it out! That's just crystallization, a completely natural process. You can easily make it liquid again by placing the jar in a bowl of warm water.
