Fried rice.π
Ingredients
3 cups long-grain parboiled rice
1 cup mixed vegetables (carrots, peas, sweet corn, green beans)
1 cup diced liver (or chicken/beef, optional)
Β½ cup diced green pepper
Β½ cup diced onions
2 cloves garlic (minced)
2 tbsp curry powder
1 tsp thyme
3 seasoning cubes
2 tbsp soy sauce (optional, for extra flavor)
3 tbsp vegetable oil
Salt to taste
Chicken stock (enough to cook rice)

Instructions
1. Parboil the Rice
Wash rice and parboil until itβs about 70% cooked.
Rinse in cold water to stop further cooking and drain.
2. Prepare Liver/Meat (if using)
Season with salt, seasoning cube, curry, thyme, onions, and a little stock.
Cook until tender, then dice into small cubes.
3. Cook the Rice with Stock
In a pot, add chicken stock, curry powder, thyme, seasoning cubes, and a little salt.
Add parboiled rice and cook until soft but not mushy.
4. Stir-fry the Rice
In a large pan or wok, heat oil.
Add onions, garlic, and diced liver/meat. Stir-fry for 2 minutes.
Add mixed vegetables and green pepper. Stir-fry lightly.
Add cooked rice gradually, mixing well so the color and flavor spread evenly.
Adjust seasoning with soy sauce or more curry if needed.
5. Serve Hot
Nigerian fried rice is best enjoyed with chicken, turkey, beef, or salad.
